Pineapple Upside Down Waffle Recipe

One of my favorite fruits is pineapple.  Before recently, I never thought to incorporate into a waffle form. I’ve had plenty of pineapple upside down cakes, so why couldn’t we try making pineapple upside down waffles? There is no reason…that’s why.

Pineapple Upside Down Waffles

Here is the thing…it doesn’t take a lot to make these.  It doesn’t take a lot of ingredients and truthfully, it doesn’t take a lot of effort either.

Some pineapple…some whipped cream and you are golden.  (or yogurt if you would rather).  Then after thinking, I thought to up the tropical theme and added coconut too. 

Pineapple Upside Down Waffle Ingredients:

½ cup flour

½ cup pineapple chunks

1 egg

1 tablespoon baking powder

¼ cup sweetener (or how much you like)

¼ cup shredded coconut

Water/milk to consistency (or even pineapple juice, almond milk)

Pineapple Upside Down Waffle Recipe Directions:

  1. Mix all dry ingredients together in a large bowl
  2. Add wet ingredients together and mix in a separate mixing bowl.
  3. Add dry ingredients to the pineapple upside down cake ingredients.
  4. Pour waffle batter into waffle iron and wait until golden brown.
  5. Serve with toppings of choice including more pineapple rings, maple syrup, chocolate chips, or whipped cream.

  1. I like the idea of using pineapple juice instead of milk or water…that’d be tasty!
    I’m not a huge fan of lemon, but for whatever reason, my favourite fruity dessert is lemon meringue pie. So good.

  2. I can hate on pineapple because it makes me itchy and gives me a stomach ache… talk about the most random food allergies. And it’s weird because it didn’t start giving me a problem until I was well into my 20’s… I’m really hoping that I don’t develop any other allergies as I get older, because if I suddenly couldn’t eat bananas… it wouldn’t be good 😯

  3. Love love love Pineapple juice! Favorite fruit is raspberry though…they make wonderful desserts and even better muffins or pancakes or waffles! And on that note, now I am hungry.

  7. I’m a huge pineapple fan! Basically, I’ll never say no to fruit–grapes, bananas, apples, mangoes, you name it. 🙂

  9. Love this!! I gotta say I love pineapple – I stand by strawberries being my fave but pineapple just seems way more special and exotic cuz I can’t find it as often!

  10. I love fruity desserts the most. Apple pie, wild berry pie, blueberry pie hmmm I think I like pie lol. But pineapple is amazing! I had a friend once that gave all of his friends pineapple on their b-day. a whole pineapple. You could even top these with pineapple Chobani 😉 or combine pineapple AND strawberries! Basically I need to get a new waffle iron so I can start making these and other creations!
