Lemon Pancakes:
I don’t know what to call these lemon pancakes…
Lemon zest pancakes?
Spirit of the lemon pancakes?
Lemon Squeeze pancakes?
Lemon cheesecake pancakes?
I’m thinking lemon squeeze because how awkward does that sound.
Moving on, I like fresh lemon or lemon flavor a lot.
Not as much as chocolate but it has always been a close second for a favorite pancake of mine. So the problem with lemon anything (think lemonade) is some people like it tarter than others.
For instance, I enjoy really tart lemonade whereas my brothers both enjoy really sweet lemonade with tons of added sweetener. So you must first determine…how sweet do you like your lemons?

Lemon Pancake Ingredients:
2/3 cup flour ( must say-wheat flour tastes weird with this but will work
1 tablespoon baking powder
1 egg or 1/4 cup egg whites
½ cup-1 cup milk depending on consistency. I prefer almond milk to sweeten it a touch
¼ cup lemon juice (Can you tell I like the tart)
Dash of vanilla extract and sweetener depending on your preference
Lemon Pancakes Recipe:
- Preheat griddle
- Mix all lemon pancake dry ingredients together in a large bowl
- Add wet ingredients (including milk and lemon juice) ogether and mix in a separate mixing medium bowl.
- Add dry ingredients to the wet ingredients.
- Spoon lemon pancake batter on the griddle with a measuring cup.
- Cook on the griddle and cook on a skillet over a medium heat (high heat will burn).
- When the lemon pancakes begin bubbling, flip and cook on other side.
- After you have cooked fluffy pancakes, put on a plate, and add a layer of melted butter, maple syrup, greek yogurt, chocolate chips, or lemon zest.
Like any of my pancake recipes, lemon pancakes are easy and straightforward. Plus if you’re feeling ultra fiesty, you can try lemon yogurt on top of your lemon pancakes!

I would have never thought to make lemon pancakes! They certainly sound like something to try! I think I would go towards the sweeter side though 😉

While chocolate always wins out in the end, lemon is pretty high up there on the continuum of awesome flavours. I’ve never used it in pancakes or waffles, I’m thinking I’ll have to try these!
Same here–chocolate will always be number one for me! I’ve never had lemon waffles or pancakes, but they sound tasty. 🙂
Lemon shortbread cookies are my favourite. Freaking amazing. The more tart the better.

It’s funny, I used to not like lemon at all, but then I made this dessert during the holidays: raspberry crumble bars…and the recipe called for a few teaspoons of lemon juice. I loved them, and the lemon flavor came through so well and just worked. So ever since then I have been all about lemon. I love hot or cold lemon water in the morning. So long story short…these sound great. 🙂
Raspberry is a huge favorite of mine too. I’ve heard a lot of people enjoy lemon tea? Maybe if I was a tea drinker!

Lemon squeeze was my first pick, too 😉 Can I be boring and say that lemonade is my favorite lemon ‘recipe’? Because while I do love the taste of lemon, I haven’t made nearly enough recipes that called for it. I did add a spoon of lemon juice to some bar filling a few times, though, and that was really good so I should probably do some more experimenting.

I recently bought some lemon emulsion, which sounded amazing at the time, but now I’m at a loss for how to use it. I was imagining cookies, but now it’s sounding like pancakes. These look great and topped with greek yogurt? genius.
No lemon for me. I’m not a huge fan of lemonade, even the sweet stuff. But I don’t mind lemon drops (the candy or the shot 😉 )
I bet these taste like poppyseed muffins, without those pesky seeds!
It could just be me, but the seeds are always getting stuck in my teeth and no one tells me LOL.
We aren’t huge lemon fans in my house, but that does sound tasty. I hadn’t thought of topping pancakes or waffles with Greek yogurt, but I bet that brings out the flavor a lot more!
It does-even plain greek yogurt does too. The tartness of yogurt really blends well with the lemon (wow I sound so foodie pro! LOL)
Lemon is a love hate for me. I simply have to be in the mood!
I loveee lemons. I would have never thought to put them in pancakes though. I must try this next time I get pancaky in the kitchen!

you wrote lemon so many times in that first paragraph that now it doesn’t even seem like a real word anymore lol. For the record, I like Spirit of the Lemon. It makes them sound like hippie pancakes! I’m all about middle of the road tartness when it comes to lemonade but I feel like in pancakes they’d be better sweet (to me), and powdered sugar + lemon is a WIN. Nicely done once again Chef Hollie!
