Guinness Pancakes

It’s no secret that my favorite beer is Guinness.  I’ve never denied it on my blog.  Since my favorite beers is Guinness, it would only make sense that one of my favorite desserts is well…Guinness flavored anything.  Lately, I’ve seemed to be able to enjoy this a lot more since many of the foodie places I’ve gone have had this option…

No I did not have this for breakfast before work because well…that might be enough to lose my job.  They are a nice treat for dinner if you are feeling it, but then again I’m always feeling a casual beer at dinner so why wouldn’t I feel a casual bunch of Guinness Pancakes?

2/3 cup flour

¼ cup cocoa powder (I used gheridelli cocoa powder but I know Hershey’s dark cocoa would be good here too)

1 egg

1 tsp baking powder

2/3 cup Guinness

1 tsp vanilla extract

*Personally I used NO sweetener here because I like the raw flavoring of Guinness.  If that isn’t your thing than maybe these pancakes aren’t your thing but you can always use a different brew or add sweetener.

My verdict?

Well duh these are my new favorite.  They are extremely dark and almost fudge like.  I bet they would be just as good in waffle form so that’s what I’ll probably do…tonight.

Favorite alcoholic (or nonalcoholic) drink?

Mine is almond milk with a splash of seltzer water and 2/3 tsp chia seeds…whatever that means.  Just kidding my drinks diet is typically water, coffee, milk and Guinness.

  1. Using a lot of water and tea. I love to indulge with Time Traveler strawberry beer though! I’m a wine girl too and tasted a pretty delicious honey mead the other day.

  2. Mmmmm this sounds delicious! My friend and I made just regular pancakes and used an IPA instead of water… Also worked well. But I think the chocolate might have sold this to me!!

  3. These pancakes look amazing! Hmm. Favourite drinks would be coffee and beer, I guess. Ginger beer is delicious, alcoholic or non-alcoholic.

    They look great. Hope you enjoy them in this form and in waffle form as well. Maybe make them as crepes, stuffed with nutella and banana…..

  5. My favorite drink is coffee most definitely. Since I am a wild animal and spend my nights indoors playing with my puppy, I haven’t ventured much into the fancy drinks at bars. I DO know I love Mojitos and Three Olives root beer shots. Does that help?

  6. I have this awkward love of gin and tonic with lime, but I’m pretty sure you can’t make it into a pancake….. it would taste wicked weird. But congrats on the new pancake creation!

  9. THIS IS GENIUS. like actually. I had a feeling you would be doing something along these lines after posting about the guiness cake! I too am a beer girl, it’s my alcoholic beverage of choice, so I’m all over this. Although I’d probably try it with my new favorite beer, Blue Moon Agave Nectar…

    Favourite alcoholic drink: my usual order is a rum and diet, but lately I’ve been loving Tom Collins and Singapore Slings. Apparently I’m developing a taste for gin!

  13. When I just read what your favorite drink was… it took me about .8 of a second to realize you were kidding. Let me tell you though for that .8 of a second, I thought you had completely lost it. Phew, glad you are still here. And one interesting combo right here! I feel very inclined to make my dad these next time I see him.. his favorite beer is also Guinness!

  14. I have never had Guinness. What would you compare it to? I have a few bottles of beer in the fridge right now (pumpkin ale and yuengling from my dad’ last visit) so maybe some experimenting is in order! My favorite beer is Ale of any sort or hard cider. 😀

  16. Now this is a pancake recipe that brings back lots of memories. My dad used to make beer pancakes for my brother and I when we lived in Germany. Sounds gross but I always liked them.

    i drink a lot of water (sometimes) tea, nuun w/sparkling water (i love bubbles) and vodka. love. vodka.

    I *mostly* drink water, but once a day or so I need to mix things up – I’m currently loving a 50/50 mixture of sparkling water and lime juice. Refreshing, crisp, and sour. Yum….

  19. That almond milk combo sounds absolutely to die for, I think I might try blending it with some kale and adding a dollop of nut butter!

  20. Ooh interesting! I’m Irish and constantly berated by my family for not being a fan of drinking Guinness (although I’d never admit that). I do love it used in like beef stew though!
