Carrot Cake Waffle

I know a few people love carrots in the blogging world…I enjoy them…in my cake.  Or in this case, in my waffle.  I created the carrot cake waffle last year as a way to get more vegetables without sautéing an entire container of kale and being bloated all night. Plus the more orange, the more tan and maybe I can look like a giant dorito by solely eating orange food.

A lot has changed since I posted a carrot cake waffle recipe (including my taste buds) so I thought I would do a bit of updating on the recipe front as well.

Ingredients:

2/3 cup flour
1 egg
1 tablespoon oil
1 tsp baking powder
¼ cup Stevia
¾ cup milk

Then add the mix ins:

1 tsp cinnamon
1 tsp vanilla extract
1 tablespoon brown sugar
¼ cup shredded carrot
¼ cup raisins

Directions: Add wet ingredients to dry ingredients.  Stir and then add the mix ins.

The more I think of carrot cake-the more I think of Spring and warm.  Which if you know me…I can never get enough of seriously. One day I’m going to figure out that way people make recipes interesting posts to blog about…I don’t have any stories related to carrot cake…do you?

  3. Love carrot cake waffles. I have been adding in nutmeg, cloves, ginger and turmeric as far as spices are concerned. I have also been tossing in some dried pineapple to the batter. To create an icing I use powdered sugar, shredded coconut and coconut yogurt.

    Now I am hungry.

  4. Hahahaha. There was a point my mom told me I was turning a shade of orange from eating carrots, sweet potatoes, and pumpkin. Little did she know Planet Fitness has free tanning with your membership. Oops.

  5. Yoplait makes a carrot cake yogurt??? I’m trying to go Paleo (or mostly Paleo) this month as an experiement so I’m just going to pretend you didn’t just post a waffle recipe using my 2nd favorite cake flavor…

  6. You had me at carrot cake… I don’t go out of my way to eat carrots but through them in a cake and smother it with cream cheese frosting and I am there.

  7. Carrot cake ftw! I’l be honest, I’m not a fan of carrots, but when they’re in cake (or waffle form)…yes. I didn’t know Yoplait made carrot cake yogurt either – that’s pretty baller! Although these would also be good with cream cheese frosting….cream cheese is a breakfast food, it totally works…

No stories about carrot cake but I did jump for joy when seeing that this was the recipe for Monday because I love carrots in all shapes and forms 😉 I am going to try these soon (ish- probably summer time) but I think I might add in some coconut. The larabar carrot cake bar has coconut and it takes it to a whole new level!

    p.s. I totally caught the eating a whole bad of kale reference 😉
