EggNog Waffles

So I know every Monday I post a pancake or waffle recipe saying…man have I outdone myself.  Let me just talk about how awesome at creating pancakes and waffles I am (kidding…)…but this week I have created a new favorite waffle (until next Sunday which I dedicate to new waffle making). 

So with that, I posted probably a month ago about pumpkin pancakes and how the blogging world is obsessed with pumpkin.  Don’t get me wrong, I love myself some good pumpkin but the real holiday gem for me is eggnog.  I know it isn’t the healthiest life choice (nor do I really care).  It is, however, extremely delicious if you care for eggnog and breeakfast.

½ cup flour

¼ cup eggnog

½ cup milk (the more creamier the more fluffy your pancakes will be)

1 egg

1 tablespoon baking powder

Dash of cinnamon

Sweetener to taste

Directions (why do I even post this part…you know how it works):

Mix the wet ingredients then add in the dry ingredients.  Cook on a griddle or heat in a waffle maker.  I chose waffle iron this particular day. 

Here comes what makes these even better. 

THE EGGNOG ICING

1 tablespoon of rum extract (or normal rum but considering my low tolerance going to work drunk was not an option)

¼ cup eggnog

Sweetener to taste as much cinnamon as you’d like

2 tablespoons syrup (+ how every much syrup you like to top with…for me a lot)

 

The final result?
This…and my does it not disappoint!

  1. Eggnog rocks. So many people seem to hate on it and I have no idea why. Every year we try and get either the Silk eggnog or the Lactaid eggnog…because my stomach can’t handle dairy!

  2. I’m dying. Seriously. Egg nog is my ultimate weakness. Egg nog ice cream, eggnog cookies, eggnog anything and I’m gonna be drooling. I’ve loved it since I was little bitty. I wanna make these so badly! Maybe tomorrow?? I have a late start–which means I can use the actual rum for the icing haha! Have a great day my love!   3. I’m not a big eggnog person. I LOVE peppermint stuff– coffee mate coffee creamer especially– but these do look delicious!

  4. OMG these look amazing!!!! Gah i love me some holiday flavor things. I used to be pumpkin obsessed but I think I burnt myself out on it cuz t
    I didn’t find it at all appealing this year. I used to love eggnog as a kid too, but now I try things like Edy’s ice cream and the eggnog latte and find them meh :-/ that said, I think gingerbread flavor might be my favorite!! Hmmmm gingerbread wafflez….

  6. Well dang, too bad egg nog doesn’t exist here.. or at least I have yet to see it.

    I’m a big fan of gingerbread & pumpkin over the winter holidays.

  7. I’ve actually never been able to get in to eggnog, but waffles drowning in syrup? Mmm I’m definitely down for that. And I’d have to say that peppermint is probably my favorite holiday flavor – the classic candy canes always make me think of Christmas, and the peppermint/chocolate combo is probably one of my favorite ever.

  8. This is one recipe I’d LOVE to try. Actually, I don’t think I’ve ever had eggnog… but it sounds like the perfect flavor for a waffle. Gingerbread would make for a really delicious waffle!

  9. Stewart’s has eggnog all year round.. just another reason it is amazing. I pretty much love all holiday flavors, but I have been craving chocolate peppermint lately 🙂 p.s. catch up soon? i think i’m signing up for my first half!!!

  10. I’m confused. I love waffles. I have the ingredients to make waffles. I HAVE a waffle maker. So why don’t I make waffles?

  12. Great idea! I think I will try this with pancakes, but only because I don’t have a waffle iron. On another note, pumpkin is awesome, but yeah, it feels like we’ve been bombarded a bit more than usual this year, especially offline (Although, no one was forcing me to buy all those pumpkin spice coffees from Dunkin!).

  14. i can’t seem to decide between pumpkin, peppermint and gingerbread, if only they combined them all for the ultimate froyo flavor!!! ever had eggnog froyo?? i wasn’t a fan…..but i have a feeling you would absolutely love it!!

  15. In the Christmas spirit already, huh! I have no problem with that 🙂 I haven’t had eggnog in years (I still can’t decide if I like it or not) and I think I may just give it a second (more like fifth) chance again this year!

  17. Shut the front door, holy heck YUM! I was sooo close to picking up some eggnog at TJ’s over the weekend… I MUST get some! Sweet breakfasts, specifically pancakes and waffles, will always be my favorite way to start the day 😀 I’ve been all about apples and pumpkin this fall but happily welcoming gingerbread, molasses, and chocolate peppermint this winter!!!
