Hummingbird Waffle

I first tried hummingbird cake a random party I went to a few years back.  I’m not sure how anyone can complain about cake though honestly.  What I didn’t know when having hummingbird cake a while back was one of the main components is banana and bananas are not a fruit I quite enjoy…at all.  I guess I didn’t really even know what hummingbird cake was, I just knew I liked it when I had it at a party once.

Ingredients:

2/3 cup flour

1/2 mushy banana (or one small mushy banana)

1/2 cup crushed pineapple

1 egg

1 tablespoon brown sugar (not packed)

¼ cup sweetener (I used stevia)

1 tsp. cinnamon

1 tsp. baking powder

1 tsp. vanilla extract

½ cup milk

Mix dry ingredients together.

Mix wet ingredients in a separate bowl (except pineapple and banana…add last). 

Then add dry ingredients to wet ingredients and cook on your griddle.

Here is something I’ll be completely honest about.  When researching Hummingbird cakes, I actually had no idea they had banana in them until doing my research.  I don’t care for banana at all.  It’s a fruit that I just don’t find appetizing.  I was a bit put off by it at first but upon realizing that I enjoyed the cake and didn’t know that it had banana in it…I’d at least try it in pancake form.  Which I did.

The banana is not a strong component of the pancake which is something I personally enjoy about it.  It wouldn’t be “true hummingbird style” without the banana and I don’t really hone in the banana taste.  Am I going to go eat a bunch of bananas and turn into a monkey now?  No, but I thought the pancakes were good despite having one of the few foods I don’t care for.

So that’s that.  I enjoy these pancakes a lot too but seeing as I don’t buy bananas for myself personally, I don’t know how often I’ll make them.

I actually just topped it with vanilla yogurt because the expiration date of the yogurt was the next day and thought…why not?

  1. I love bananas in my pancakes. It’s rare for me not to throw one in when I mix up the batter. I must remember to try pineapple too though. When I first saw this picture I thought you topped the pancake with vanilla icing. 😉

  2. I’m actually not the biggest banana fan ever. I think they’re okay dipped (okay, smothered) in peanut butter, but never have been able to enjoy them as is. Love the look of your waffle though! I have a waffle maker as well, but haven’t used it in forever! Time to break that old thanng out 🙂

  3. I’ve never heard of hummingbird cake … although there used to be a Hummingbird Bakery in town a while back; they made the best baked goods!

  6. Never hear of hummingbird cake before, sounds interesting though. I don’t think I have ever cooking with pineapple before either. I do love how you have an endless amount of pancake / waffle recipes, such a random food to be such so in love with and you stick with it!

  7. I can’t even understand not liking bananas – I probably average at least 1.5 bananas a day! Haha. Part of that isn’t their taste but as you pointed out, the role bananas play in baking/cooking… they can give things a really nice, soft texture without adding a whole lot of banana-y flavor.

    Hummingbird cake is one of my favorite kinds of cake, so I’ll definitely be making this recipe sometime 😀 There’s a place in Augusta called the Boll Weevil Cafe (kind of weird because the boll weevil was a cotton pest from a long time ago) but they serve these amazing and HUGE cakes (8 layers on some of them). Hummingbird is one of them and it’s to die for.

  8. I have a love-hate relationship with bananas. I really can’t eat them on their own, but I buy them, let them all ripe, and cut them up/freeze them for smoothies and other things. My smoothies wouldn’t be complete without them. But I gag the entire time I’m cutting them up, haha.
    I’ve never been a fan of watermelon, cantaloupe, or any melon for that matter.

  9. I can’t believe you don’t like bananas! It surprises me because it’s like the universal go-to fruit! Even my brother (who is really picky) loves them! I don’t like things with a fake banana flavor, though, it kind of makes me gag (like Laffy Taffys). I don’t know if I ever met a fruit I didn’t like but my least favorite is probably grapefruit.

  10. That looks delicious! I’ve never had a hummingbird cake, I’m not sure I’ve heard of it before either. I have a tie for my least favorite fruit berween cumquats and persimmons, I just don’t like the flavor of either one.

  11. I honestly had no idea bananas were a component of hummingbird cake either, I just knew I liked the cake! Unlike you, I am actually a huge banana fan, so this recipe is right up my alley!

  12. I love bananas. They’re the perfect food. I guess I really don’t have a least favorite fruit. I just wonder why this dish is called a “Hummingbird Cake.” I mean, it doesn’t have any hummingbird in it. No hummingbird extract…or bits of hummingbird. I wonder if hummingbird tastes like chicken. Needless to say, I’ve never had a hummingbird cake. 🙂

  13. I love bananas lol. Especially frozen, but I know a few people who don’t care for them. For me, I don’t care for kiwi or watermelon at all. Not even desserts with them. I have never had hummingbird cake before but it sounds like I would love it. I bet the banana is really just there for moistness honestly not so much for taste
