Today marks the first Monday I’m not up at a bright and early 5:30 am. Isn’t that nice? I can spend loving time eating oatmeal pancakes not just running around like a wild chicken with its head cut off, hoping I’m not late for my class about human disease….
I am trying to get MORE carbs in here and there so what better way than oatmeal pancakes. Week-long carb load? Necessary. It all begins with pancakes baby.
Not just any type of pancakes…
Oatmeal pancakes:
I’m not sure if I have posted the exact recipe for oatmeal pancakes (not that it matters too much), but I haven’t had oatmeal pancakes in a solid year, so I’m counting them as new (because that is how I roll). I love a good pancake. I also love this recipe because, as a busy college student. I can have oatmeal pancakes made in a few short minutes.
½ cup wheat flour/oat flour/ pancake mix
½ cup instant oats (cooked) You can use rolled oats too, make them cooked. I use Quaker oatmeal…because it’s easy and I can do that.
1 egg
2 tsp cinnamon
1 tablespoons baking powder
1 chopped up apple
And also sweetener to taste
splash of vanilla extract
1/4 cup milk (regular milk, almond milk…whatever kind of milk you need)
There are plenty of dry ingredient mix-ins like brown sugar, chocolate chips, or even bananas to make oatmeal banana pancakes.
Mix all the dry ingredients: oats, sugar baking powder (minus the apple). Then slowly add liquid ingredients.
Cook the oatmeal pancakes on medium-high heat, until bubbles form. Then flip. I added the apple into the oatmeal pancake after it had cooked for about a minute on the griddle. It added that nice little crunch.
Benefits of oatmeal pancakes are they are super dense and thick from the oatmeal. I have a huge appetite and I was struggling to finish (which never happens).

Pancakes taste better than oatmeal, but I’m going to choose oatmeal because I eat it every. single. morning. and I never tire of it! Can I choose waffles?
Oatmeal pancakes! HELLLZZZ YEAH! I looooove both! So don’t make me choose….in fact I won’t! I will just make your oatmeal pancakes and be perfectly satisfied in both departments 🙂
Can I pick cereal? Hahah. I like oatmeal and pancakes, though I’m not sure if I have had oatmeal pancakes? I think we need to have a party 🙂

PANCAKES fo’ sho’. And the weather here has been strangeeee. One day it is snowing, the next it is 65, then back to 35 again. It needs to make up its mind!
pancakes- YUM! its cold in the morning (40s) but then gets up in the high 60s
YAY CARBS. I’m not crazy about oatmeal or pancakes, though if I had to choose I’d choose pancakes. I’ve never tried making them with cooked oatmeal, but I’ll have to give it a go. My personal favorite is obviously muffins.
Woow yay for more carbs…sure helps with energy levels 🙂 I would go with oatmeal… but with this recipe I don’t have to choose!
I have oatmeal every morning! But Pancakes do taste so much better especially drizzled with maple syrup 🙂

Hmmm…good question. I think I’m gunna go with pancakes because I’m not a fan of hot oatmeal. I can eat overnight oats but not hot oatmeal-bleh. The weather here in Michigan is getting pretty chilly. It’s dreary out, it’s in the 40’s…and there’s now frost on my window ever morning 🙁
