Chocolate Zucchini Pancakes
When I was a child, my mom made a mean chocolate zucchini bread. Lately, I’ve been turning all of my favorite childhood food memories into pancakes in waffles. That’s how the chocolate zucchini pancake was born. Plus sneaking in a few extra zucchini to chocolate zucchini pancakes seems like a win for everyone. Plus it’s a great idea if you are looking for a healthy, gluten-free pancake. Heck, you don’t even have to feel guilty eating them after 12 pm.
Chocolate Zucchini Pancakes Ingredients:
2/3 cup flour (all-purpose flour or wheat flour)
¼ cup unsweetened cocoa powder (I like Hershey’s cocoa powder
1 teaspoon vanilla extract
1 teaspoon baking powder
1 egg
Sweetener to taste
½ cup shredded zucchini
¾ cup milk (regular milk, almond milk, all work well)
Chocolate Zucchini Pancake Recipe:
- Preheat griddle.
- Mix all chocolate zucchini pancake dry ingredients together in a large bowl
- Add wet ingredients together and mix in a separate mixing medium bowl.
- Add dry ingredients to the wet ingredients.
- Pour chocolate zucchini pancake batter onto griddle and cook on medium heat.
- Wait until bubbles form on the chocolate zucchini pancakes and flip and cook other side.
- Once you have fluffy pancakes, remove.
- Put your chocolate zucchini pancakes on a plate and add a layer of melted butter, maple syrup, greek yogurt, coconut oil, more zucchini and chocolate chips, or whatever you want.
Chocolate Zucchini Pancakes are easy as that and you can be healthy too.

Chocolate and zucchini go really well together in many forms. Like in brownies. Or, frozen shredded zucchini in a smoothie with cocoa powder (just trust me on that one). And of course, this delicious-looking pancake.
It’s funny… when I was in 4th grade I went to a friend’s birthday party that had zucchini pancakes for breakfast the next morning and refused to ever sleep over at her house again. She’s still my best friend but I know to avoid meals with her because this mixing of ingredients was just such a strange concept to me lol I like vegetables but I’m so hesitant to try them baked into foods.

You can’t really taste the zucchini but I suppose the vegetable as a whole is an acquired taste. 🙂
No I just bring my own food. I’ve learned my lesson that her family eats strange things.
I am obsessed with chocolate zucchini bread. My grandma makes a killer loaf! At home, we always have one in the freezer, and I’d argue it tastes even better frozen.

I actually love most vegetables but I have found that cauliflower, butter, and chicken broth mashed beyond all recognition makes me think I am eating a heaping pile of mashed potatoes.
I love zucchini bread so add in chocolate and these sound fab! I’m a big fan of hiding veggies do I don’t think about it 🙂 lol
I remember eating leftover cake and cupcakes for breakfast and lunch back in the day. Good times. But I have to admit that I’m not all together sold on the idea of hiding veggies. I’m always hearing people rave about the chocolate and zucchini combo, but seeing as zucchini is one of my most hated veggies, I’m not sure I can get around it. Maybe if someone were to cook them for me and not tell me; but then I might develop trust issues…
I wish I could go back to when I could care less about nutrition to be honest. I watch little kiddies in envy because they just don’t give a damn. My favorite way to hide veggies is probably cauliflower in macaroni and cheese because it makes the sauce really thick and good!
I always loved veggies (I was a weird kid) so mom didn’t have to “hide” them persay. But I guess I’d say I love adding them to pastas and rice and stuff, mixing them in just makes it taste so much better. (I’m a mixer..love throwing things together and seeing what I come up with…gotta live on the edge! 🙂 )

I love zucchini cake so I would have to think this would be just as good! I cannot wait for farmers markets to start around here to get zucchini for cheap 🙂
When I was little my mom used to make a chocolate zucchini cake. I loved it so much until I was 9ish and found out it had zucchini in it. Man I was a brat. Just for the record, grown up Gina is much less brat-like and enjoys everything with zucchini in it. 😉
zucchini bread is my favorite baked good of all time. I’ve had it with chocolate chips in it but never chocolate flavored! And in pancake form…..yes. Now that is a pancake I could easily get addicted to.
I actually never make zucchini bread even though my dad grows it and we always have a butt load! Note to self, that needs to change. Um I am about to text you because commenting here in public about some of the above is not appropriate 😉
