Ham and Cheese Waffle

If you are like my family (which is highly unlikely) you have a spiral ham for New Years.  I personally love ham (another reason I couldn’t be a vegetarian).  It occurred to me that I’ve never made a savory ham and cheese waffle, though I’ve done bacon…so why not do ham too.  (but not spam).

Ingredients:  (for one person)

1 cup shredded ham (that is about what I took anyways)

½ cup cheese (I chose cheddar but there are many options here)

½ cup flour

1 egg

1 tsp baking powder

1 tablespoon oil

½-1 cup milk or water depending on what you like

Spices I added: cinnamon

Directions:

  1. Mix wet ingredients together then stir in oil.
  2. Add in dry ingredients and mix well adding more water/milk if necessary.
  3. Last add the ham and cheese.
  4. Add to waffle maker or cook on griddle.

I know that probably sounds pretty ham+cinnamon but in my house we use a ham glaze which is sweet and paired with savory ham is actually quite good.  I do enjoy savory waffles personally.

After having breakfast with Shannon last week, I thought about a ham and pineapple (ie:Hawaiian combination) that will be coming to you guys shortly.

WIAW: Since Whenever I Posted My Last WIAW

I feel like as bloggers we must think that our lives are so interesting all of the time.  That if we have down time, how the freak will you ever blog if your life is…dare I say it “normal”. 

Sometimes I wonder if as a blogger, people really think I live some exciting and always joyful life that I can plug an interesting life post everyday.  Or that I’m motivated to post everyday because my life is just that fabulous.

Well my life is fabulous but I must say, even when my blogging has been lacking. So with that I’ll just post some photos of my eats.  Not sure how recent they are and time stamping them won’t do anything for you or me.  I will tell you though what I’ve been enjoying since returning to eating by myself.

Actually that is a dirty lie,I have been eating a lot on the campus with people I’m working with.  I promise I’ll do a full internship post soon but why do one when I haven’t been there long enough to accurately judge.  Seeing as I haven’t done a WIAW in a few weeks is all I’ve eaten since last time…

WIAW: More Protein

It has been requested that I continue this What I eat while eating high protein.  I mean I can’t eat protein pancakes, eggs and giant steaks at 8:00pm every night (well-yes I can…).  Anyways-I don’t really remember what day this is from (sometime between this week and last week). 

Breakfast today, I had eggs.  I try and have at least 2-3 eggs daily.  Not because they taste awesome with ketchup, but because I just have really come to like scrambled eggs.  Today I had 3 regular eggs and 1 cup of egg whites.  I know-that is quite a lot of eggs and protein and yes, it’s very filling.  I like it.

It kept me full for a solid 5 hours.  Not that I really needed too but that is just what it did.  For lunch, I had a salmon salad with feta cheese and balsamic dressing.  I honestly don’t think you can have a bad salad that includes balsamic, salmon and feta cheese.  The salmon was delicious.

Some of the things I try and have daily are salmon, eggs, cheese, Greek yogurt and some sort of oil (balsamic).  I do have fruit, not a lot, but I do have it.  As I said, last week, I don’t really care for fruit so limiting that was not a big deal. 

Then later in the day (creature of habit) I had another quest bar.  I couldn’t get to any “real” food, (I don’t actually know what fake food is anyways) but I had a quest bar-Coconut cashew because that is my favorite.

Dinner that particular night was ham.  My mom makes a mean slow cooked ham and I was not going to pass that up.  Even if that meant eating dinner at around 8pm after getting home.  Luckily for me, she saved me a hearty helping and I was able to go back for seconds too.

That particular day was a lighter day of eating, but I also didn’t work out.  It was one of my off days during my rest week last week.  I don’t eat less on purpose during rest days, I just don’t tend to be as hungry.  I mostly napped the entire day and caught up on school work.

Food Day Monday and Real Girl Streaks

Okay yes.  True life:  I promised I would do a food blog soon and what better way than Monday.  Wow is it already another Monday?  And not just any Monday!  It’s the mom’s birthday.

So yes.  My weekend went Matt’s graduation, fathers day and now the moms birthday.  Tomorrow is also epic as my pool opens but it isn’t quite a um…celebration.

This is when my azz actually sat in a guard stand. Now I just deal with the problem people.

 Without further ado: nom noms of the day

This is now my working week of summer time hours when I wake up errday at 6am.  I go to the gym to either lift, swim or run outdoors from 6:30-7:30.  It depends on my mood and how I slept the night before.  I do not run on tired legs.  It’s not my jive.  EVER.

I come home, make breakfast and am out the door by 8:15 since I need to be there at 8:30. Except Mondays because that’s my day off since the pool isn’t open on Mondays.  I thought I would at least get into the routine today.

Breakfast today was…just for the occasion of food blogging and changing it up.  Two egg sandwiches.

I had a ton of homework for my online classes so I caught up on that all morning.  Then I was already starving by say 11:30 so I decided to make myself more tuna fish sandwiches.  Sandwiches must have been my jive today.

Then I got my aerobic action on, as I do every Monday.  So I guess I don’t really have the day off, but I don’t consider aerobics to be much work.  The ladies are hilarious and the time always flies right on by.  Today I integrated superbass and finally found a good remix of party rock anthem.  I swear the ladies wish they had my booty beats aerobics CD when they were off on their own outside of class.  They always ask for all the songs bahaha.  I’m a terrible influence.

Dinner was the mom’s favorite (similar to my favorite I suppose).  Ham, sweet potatoes and corn.  Does anyone else have a strange addiction to ham?  I find it incredibly tasty. 

Oh and I’m a 4 day real girl streak.  I know you probably are as shocked as I am.

Ding Ding Ding Now Starting Round 1


Of Finals week (for me anyways).

Finals Day Round 1. An excuse to wear makeup and put my hair in the worlds greatest messiest side bun on top of my head. AKA anti real girl days.

Don’t think I’m lazy my blogging bffs, I’m not.  I have two finals that required any studying and one that requires much more than the other.  Both of them are math.

My first one was today at 10:15 and it went well.  I was very pleased with it.  I’m pretty sure I got at least a 90. 

The second one (and harder one) is on Wednesday.

I have a few presentations for education amongst there…but if you can’t tell I enjoy talking so no big deal.  Apparently I’m a decent public speaker as I can keep the class amused for a rousing 20 minutes when I normally present…go figure.

Needless to say, I have never really been in a situation like this that my finals aren’t making me sweat too much.  I mean they are obviously, but there is not a need for me to stay in the library for countless hours like every other time.  My finals this semester have more or less have been a culmination of projects and speeches with two intense math tests.

I won’t complain because I don’t want to jynx it.

Today because it was blistering cold and rainy the temperature dropped back down to 35 and pouring rain.  Needless to say I kind of hid in my room before and after finals and under about 1000 layers of covers.

Since it was so cold out, I decided it was appropriate to have a nice ole warm blueberry waffle topped with Greek yogurt and more blueberries.

I’m rather proud of how my photography skillz have progressed since the year has gone by.  One day I hope to be as classy as some of those photographers that make you crazed with hunger just staring at their food.

To continue to chain of food photography, I took a picture of my “garbage salad”.  I call it a garbage salad because it was like I dumped everything and anything found on the salad bar into the salad.  All topped with feta cheese.

Yes there is chicken, ham, banana peppers, olives, spinach, oranges, pears and cheese all in that salad.

If you squint you can see my corn and roast beef sandwich in the background...somewhere...



I’ve also been getting into tuna fish sandwiches for snacks lately (because I have 10 cans of tunafish that I need to use up before the end of the week).  1 can of tuna fish+1/4 feta cheese+ half a bottle of parmesan cheese, all toasted up.  It is certainly a nomtastic snack that I can eat in class and guarantee no one will sit next to me.  Perfect.

Questions for you:

1.       Did you have any particularly rough or easy finals weeks?
Last Spring Semester, I had a rough one studying for my graduate level math course.  (I almost decided to do a BA/MA (bachelors-masters) program at school where you get your masters  in math alongside your bachelors in 4.5 years.)  Uh yeah hardest test of my life.  It was worth it though because I got a 3.0 in class but was more in limbo about math in general.  Needless to say I didn’t want to get a masters in math.  That was the hardest semester of my life to begin with though.  It began my questioning of weather math was really for me or not or if I care for proofs. Random side notes of my life.

2.       Would you rather swim 2 miles in open rough currents water or run 15 miles on the treadmill staring at the wall with no music or tv?  Feel free to tell me why.
