Blueberry Pancakes

Something I like to do is pancakes and waffles.  Not only make pancakes and waffles but make them with ingredients that I don’t have to search halfway to the sun and back for specialty ingredients…that’s just me though maybe you like those specialty things.

With that I give you a classic and perfect blueberry pancakes. 



Stemming from my original basic pancake recipe, these blueberries pancakes are yet another hit whe I’m craving pancakes.  Let’s be honest here as children my parents didn’t say “Hey Hollie do you want this paleo protein almond flour with a hint of coconut zest and salmon pancake”.  They said “Hey Hollie, want pancakes…we have blueberries”

Blueberry Pancakes

2/3 cup flour

¼ cup sweetener (sugar or an equal cup for cup artificial)

1 tsp baking powder

½ cup milk

1 egg

2 teaspoons oil

1 tablespoon vanilla extract

½ cup blueberries


Mix everything together (besides the blueberries). 

Pour on griddle and add blueberries. 


These have been a bit hit with my family, Tim and everyone.  Mostly because the most foreign ingredient in there is truvia.

Don’t Leave Me Home Alone

I think my father secretly likes being referred to as the daddykins on the blog.  It makes him feel so famous.  I think he also gets tired of me rambling off about my blog in true life but I’m wearing real girl clothing so there is only so much I can do.

Hmm, Thursday was a big day for me.  I became-Hollie-ultra domesticated female.  I did some baking (peanut butter cookies), cleaning, and even laundry.

I really do believe if I wasn’t so sassy, I could just go major in professional housewife blogging, running, swimming woman.  I feel that is a pretty standard degree at most colleges.

I’m glad you guys enjoy the new header.  I actually hated the other one but never got around to changing it.  It is my summery and joyous, kinda ,like me.  Now I suppose I can look at my own blog once in a while (like déjà voo?).


Today was not too exciting of a day sadly.  I made a waffle before heading off to the pool which is where I spent the majority of my day.

I'm not sure why my blueberry jam looks redish. Either way it was still nomtastic.

I hate eating on the run but when I do 99% of the time, it is a tuna fish sandwich.  It’s kinda like my staple lunch at the moment.  Between helping new guards and eating, I managed to get a tempo run of 8 miles in there somewhere.  VA weather was glorious today as it wasn’t too humid or hot.

I do feel the need to share with you the most delicious dinner that I made last night.  I got it of all places off the back of the cheese package.  I’m kinda in love with cheese with mozzarella, cheddar and feta and parmesan being my favorites.  Oh wait-crumbly bleu cheese.  No and goat cheese.

Okay yes-cheese is good.

Anywho without further ado (and you know all my recipes take cerca de 15 minutes or less to prepare…).


2 cups cooked pasta

½ pound Italian sausage

1 package spinach leaves

1 can diced tomatoes

1 cup mozzarella cheese


2 tablespoons parmesan cheese

Mass amounts of garlic


  1. Crumble sausage into large deep skillet and cook on medium heat for 10-12 minutes.  Stir occasionally.
  2. Drain sausage then add spinach and tomatoes and cook until spinach has wilted.
  3. Add in the cook pasta followed by cheese and garlic.
  4. Then eat (99% of it like I did…actually my brothers were home, I can’t take all the credit)

Blerg-I’m doing a triathlon.  I”m more nervous then god knows what but we can chit chat about that tomorrow.  Oh and aDuBs is doing a 5k so go wish her luck.


Pumpkin’s Summertime Bestie, Pdubs & Well that is it.

I would like for you to all to meet The Pumpkin Pancakes Summertime cousin.

If you know me pretty well, then you know Pumpkin pancakes are one of my favorite pancakes.  So sweet and delicious and you get a serving of veggies (not that I don’t get enough).

Well stores down in VA like to be a pain in my butt.  It is becoming nearly impossible for me to find any cans of pumpkin.  When I do, though, I will hoard.

Greek yogurt has the same effect in pancake making as pumpkin in making them so moist, so it makes an awesome substitute.

The Greek Yogurt  Pancake(with blueberries)

½ cup flour
1 scoop protein powder (If I’m not addicted to pancaked, I am to protein powder).
1 egg
1 tsp baking powder
½ cup Greek yogurt (I used fage)
½ cup blueberries
About ½ cup water
Mix and pour on griddle.

True life: I ate these in less than 1 minute.

Incase you guys wondered (or didn’t follow zee blog over last summer) Anna is my real life bestie.  I mean I have about 2 real life friends and then 100 blogging bffs.  Then my parents and brothers, because legitly, Anna and zee fam are about all I see down hurr.  I’m perfectly okay with that.  Oh and my road race besties, gotta see them every weekend.  🙂

Just to remind you since basically we are not really ever apart.  So she can be your blogging bestie too. 

I went on a date with zee bestie today to Pdubs aka Panera.  Why I decided that was acceptable word for it, I’m not sure.  I was super pumped though, because she called me and said she would be a little late because she went running!  Seriously, do I force all my bestfriends to be runners.

I think this ups my photo skillz from a 1 to a 2 out of 10.

Incase you wondered what I have been up to workout wise the last few days.  I have had a few 8 mile runs and did some swimming.  But here is the big news:

I took my bike out for a spin.  YES 5 miles of gloriousness and now I’m more sore than I don’t know what.  That 5 miles is killer.  For all you biking babes and dudes, props to you guys.

Today  I went for a swim after Panera with Aanna.  We had such a fun time and were both so focused as if we stopped the creeper next to us would stop and talk.  Um and he asked if one of us would rather share a lane with him versus each other.  No thanks.

No really-I don’t.

I can’t really say pancakes because those just remind me that I’m living.

2.       Are your besties athletes with you? 
My two bdubs (okay really this word will get obnoxious quick) in Upstate is actually the other female distance swimmer with me.  The other one used to swim but got a shoulder injury.  .

Anna down hurr, is running to run and because she loves to stay active. She does a few road races with me but she runs on her own time because she is normally a late night jogger and you know us grandmas gotta be in bed by the time she starts.

I don’t force any of my friends to workout with me and I’d rather be there besties then their gym stalker. 

Ding Ding Ding Now Starting Round 1

Of Finals week (for me anyways).

Finals Day Round 1. An excuse to wear makeup and put my hair in the worlds greatest messiest side bun on top of my head. AKA anti real girl days.

Don’t think I’m lazy my blogging bffs, I’m not.  I have two finals that required any studying and one that requires much more than the other.  Both of them are math.

My first one was today at 10:15 and it went well.  I was very pleased with it.  I’m pretty sure I got at least a 90. 

The second one (and harder one) is on Wednesday.

I have a few presentations for education amongst there…but if you can’t tell I enjoy talking so no big deal.  Apparently I’m a decent public speaker as I can keep the class amused for a rousing 20 minutes when I normally present…go figure.

Needless to say, I have never really been in a situation like this that my finals aren’t making me sweat too much.  I mean they are obviously, but there is not a need for me to stay in the library for countless hours like every other time.  My finals this semester have more or less have been a culmination of projects and speeches with two intense math tests.

I won’t complain because I don’t want to jynx it. 
Today because it was blistering cold and rainy the temperature dropped back down to 35 and pouring rain.  Needless to say I kind of hid in my room before and after finals and under about 1000 layers of covers.

Since it was so cold out, I decided it was appropriate to have a nice ole warm blueberry waffle topped with Greek yogurt and more blueberries.

I’m rather proud of how my photography skillz have progressed since the year has gone by.  One day I hope to be as classy as some of those photographers that make you crazed with hunger just staring at their food.

To continue to chain of food photography, I took a picture of my “garbage salad”.  I call it a garbage salad because it was like I dumped everything and anything found on the salad bar into the salad.  All topped with feta cheese.

Yes there is chicken, ham, banana peppers, olives, spinach, oranges, pears and cheese all in that salad.

If you squint you can see my corn and roast beef sandwich in the background...somewhere...

I’ve also been getting into tuna fish sandwiches for snacks lately (because I have 10 cans of tunafish that I need to use up before the end of the week).  1 can of tuna fish+1/4 feta cheese+ half a bottle of parmesan cheese, all toasted up.  It is certainly a nomtastic snack that I can eat in class and guarantee no one will sit next to me.  Perfect.

Questions for you:

1.       Did you have any particularly rough or easy finals weeks?
Last Spring Semester, I had a rough one studying for my graduate level math course.  (I almost decided to do a BA/MA (bachelors-masters) program at school where you get your masters  in math alongside your bachelors in 4.5 years.)  Uh yeah hardest test of my life.  It was worth it though because I got a 3.0 in class but was more in limbo about math in general.  Needless to say I didn’t want to get a masters in math.  That was the hardest semester of my life to begin with though.  It began my questioning of weather math was really for me or not or if I care for proofs. Random side notes of my life.

2.       Would you rather swim 2 miles in open rough currents water or run 15 miles on the treadmill staring at the wall with no music or tv?  Feel free to tell me why.

Oh and in response to your question about Homecoming Queen in high school.  No I was not homecoming Queen, I lost that vote by 7 (out of 3000 votes-when I was materialistic and all that jazz I was sad but now I have bigger and better things to worry about…).  I was on Homecoming Court though and D’Angelo is my BFF best escort ever.

I had to wake up extra early today because I had an advising meeting today at 8:30 am with my education advisor (I have two for my double majors).  I have to look decent (not that he isn’t my teacher and has seen me live my life in leggings the last 3 months) but maybe he has forgotten and will just remember me through advising meetings.

Before my meeting, I made arguably some of the best pancakes I have ever made.  They were just blueberry with lemon zest but they came out so fluffy and amazing.  Seriously, these might be the proudest pancakes to date.  I wish you could tell more but I spelled lolz in blueberries but at least you can see the sprinkles.

Someone asked me to post more daily looks that I’m rocking.  Wow-I’m not a fashionista but here today’s look as well.

Cardigan is from Willy Smith, dress roxy and leggings are Abercrombie and fitch and belt forever 21.  My normal outfit (99% of the time) is tunic+leggings+sweater because that is how I roll.


My meeting with my advisor went well and then to my delight we got our tests back in Modern Algebra class.  Holla at me because I got the highest grade in the class!  So naturally-I taped the test on my door, because that is how I roll.

Nope...she doesn't use the same tests at 2008...


After running today, I made myself a protein smoothie using the Aribonne protein I got in the mail and a new type of Fage Yogurt they stocked at the grocery store.  It was so thick and pink and delicious in my smoothie.  I recommend this to anyone.

OhEmGeez Protein Powder?

So many nomss

1 scoop vanilla protein powder (I used the Airbonne)

6 ounce of yogurt (I use Fage with Cherry and pomegranate)
1 tsp Xanthem gum
A handful of raspberries
Ice cubes
Mix in blender and obviously add sprinkles.

I really like the taste of the vanilla protein powder and I will be trying one more packet in pancakes (the true test) and one more in a plain smoothie style to get the full flavor.  It helped to thicken the smoothie more than my previous protein that is for sure.


For lunch today in my normal lunch date with Julie, I had the exact same thing as Monday.  It was too good to resist and therefore I didn’t need to whip out my camera for that baby girl.

And for dinner I made steak pumpkin enchiladas subbing in the steak for the chicken.  These were awesome as always.  They are meal I’ll never be sad I tried because I frowned my nose at first.
