Breakfast for Dinner?

My week started oh so well, when I tripped and fell down the stairs spilling my pancakes and breaking my favorite plate. The mellow yellow favorite plate.

But sadly I didn’t have to wake up for practice this morning. So I woke up at 9 and made peanut flour pancakes. Then topped with chocolate pb2 and Fage yogurt.
I learned, yesterday while watching The Great Baker, the worst thing someone can say after eating something peanut buttery is “man I need some milk.” So that’s why I topped with Fage, so I didn’t need any milk hehe.

I went to the gym for an easy 6.5 mile run and some more core exercises. My core is becoming a bit weak lately (and thus my butterfly kicks are suffering boo). I could also catch up on Say Yes to The Dress from 11-11:30, which is my favorite show to run too. Although most things on TLC have got my heart.

For lunch, I went and had a Hollywood Hill wrap at the union. The wrap was a basil based wrap, with rice, chicken and chedder cheese. Also included was mayonnaise but I asked for none of that. Mayonaise and Hollie just do not and will not ever get along.

Plus salad number nine. This was a salad inspired by Chick-fil-a’s fruit salad. I had spinach, grape tomatoes, pineapple, maderin oranges with carrot shreads and a bit of feta cheese.

Then I went to swim practice. It isn’t hard this week like I said earlier since a lot of people can’t make it due to exams and exams schedules.

I got done with practice in about an hour and forty five minutes. It was nice to just relax and stare at nothing versus studying for a while.

 

Then for dinner Aram and I made biscuits and gravy. I stole the recipe off of the carbquick box for the gravy mix and used a standard packaged mix for the corn muffins.
(hehe and you thought I was going to have pancakes for dinner didn’t you?)

These are my kind of recipes so easy.
1 cup sour cream
1 cup water
¼ cup carbquick

This is what I used:
1 ¾ cup Greek yogurt
1 cup water
1/3 cup Carbquick
1 tsp garlic salt
1 tsp onion powder
1 cup ground sausage

Add everything and boil for about 3-4 minutes. Just enough to warm it up.

If I had thought about it earlier-I might have added sautéed mushrooms into the mixture.

Oh so appetizing...

ChocoNanner Muffins

This recipe was inspired by two blogs that I also follow like it’s my job. No really? When will this become my job. Middle school children need no help with math…
First I took Shanna’s banana scone recipe. Then because I didn’t have a cool pinwheel scone maker, decided I would make muffins. I also cut the recipe in half because I was just making them for Aram and I.

The name came from Faith, Food and Fitness and her love for using the words nanner and tater. Now I do it too!

Without further ado:
Choconanner Muffins:

½ cup wheat flour
1/3 tablespoon baking powder
¼ tablespoon canola oil
½ cup mashed nanners
¼ egg substitute
1 tablespoon chocolate chips

What do do:
1. Mix dry (except chocolate chips) ingredients.
2. Mix wet and mushy.
3. Add together and then fold in chocolate chips.
4. Bake at 400 degrees for 12 minutes.

While your eating them you can read their blogs too like I did.

Goals and Casinos

Let’s see here today. Sunday is obviously a fun day. Especially right before finals and even in the rain. Now that we have had snow-I would just assume it stays here for a while. Rain is so mushy and gross when mixed with snow and the roads are dicey=death+icy.

Thank-you everyone for your lovely comments about my food overload. I had gone three weeks without binging and one day (although upsetting) it will not be as bad as I’m making it out to be. I am progressing. It is slow but I will get where I need to be. It is just as important for me to keep a positive attitude or I will only go backwards.

Here are my goals from last week (that I plan to continue to this week)
Here are my goals of the week:

1. Try at least 3 new foods on campus/in restaurants.
I tried quiche, sea bass and polenta to name a few. I have been doing really well with trying new things and getting out of my elements.
2. Try 1 new recipe.
Di’s Cranberry Cookies hello.
3. Try to have at least one breakfast that is not pancakes.
Although it was not as fancy as I would have liked or exciting. A bowl of peanut butter, yogurt and oats is not pancakes.
I’m also adding one for this week which is run about 30 miles. We don’t have intense swim practices this week (academics over athletics) so I must do it up.

Anywho for breakfast Aram and I made homemade choconanner muffins. The recipe is to come, I promise. Aram liked them a lot and I could sneak some fruit into his diet because he refuses to eat campus fruit. He did, however, have a lot of kiwi at the Chinese Buffet last night so I can’t give him too much crap ha.

I went to the gym today and did some core exercises and ran 6.5 miles. It was enjoyable, especially because I found a new tv show to watch in the gym. The Best Baker! It’s made by the TLC’s cake boss and it is so interesting. The cakes look delicious of course.

For some sort of mid afternoon “precasino” snack, I made some pancakes. I thought today would be my day of no pancakes but clearly it was not. I made lemon zest cakes but then added raspberries. I have to get rid of all these foods before winter break. I still need to get rid of tuna and mashed potatoes and my immense supply of Greek yogurt. I’m not sure I could do it if I ate a Greek yogurt with every meal.

Then off to the casino with my housemate Julie. It’s on the Mohawk reserve about an hour northeast. I can’t take pictures or anything in there but I ended up coming out with a profit of 20 dollars. All from slots I might add. Julie came out with 60 but she is a black jack champion.

For dinner we stopped at the union on campus and I tried a Hollywood hills wrap. It had rice, ham, cheese and turkey. It was good and I’m glad I did.

Also for dinner is salad number 8! Inside of salad number were peaches, spinach, toatmoes, kidney beans, banana peppers olives. My strange combination of food works wonders you know. :)

Snow Snow Snow

I always tell myself that after the first snow fall, I’m going to look outside and go back to bed. I won’t go to practice and yet every year snow comes and every year I still go to practice at 5:30.

I came home and made Krissy’s Nutcakes (dedicated to my peanut butter champion friend). Delicious as always. I love peanut flour and topped with peanut butter, double trouble.

One of the blogs that I also read like it’s my job, Kate@For the Love of breakfast is having another 30 days of breakfasts. She has different breakfasts for 30 days. Although, I’m not sure I could do this right now ha, I think it would be really fun. So I’m contemplating doing something similar.

But I am participating in challenge from Lisa@I’m an Okie. For the month of December, I will have at least 20 salads. I have been lacking on my veggies lately. Here is my lunch. Baja fajita wrap and a salad. Salad numero uno had spinach, grape tomatoes, olives, pineapple and red kidney beans. Topped with red vinegar. I told Aram-I have to eat the entire salad for it to count. Often times in this situation I would just eat the olives and be like…oh yeah I had that salad. I ate the entire thing don’t worry ha.

Salad 1/20

Aram and I bought some tilapia and mashed potato mix and made-well tilapia and mashed potatos. We also made little chocolate chip muffins. I didn’t have a normal muffin pan, so I used my easter muffin pan. Cute little bunnies. He still ate them even though they weren’t “manly.”

My cameras flash is broken!  I don’t know what to do, whenever I disable the flash the camera takes reasonable photos but if the flash is abled then they are completely black.  So strange.

Thanks to everyone who responded about my last “concerning” blog ha.  In regards to that-I have tried to post about everything that goes into my mouth today to show just how much I eat.  It’s also a double grime girl swim practice day-so even better.  I’m going to not use a lot more pictures versus words.

I didn’t add any aspect of I compete at a varsity level in two different sports-not one but two.  Each college sport has it’s own set of practices and rules that I need to follow.  That means I have a set amount of practices I have to do for both sports.  My coaches both understand completely since swimming and running are endurance sports if occasionally I do need to miss one or the other.  Normally it isn’t speed days I miss but just more of cardio days.  It isn’t like I have decided to exercise more because I want to burn more calories (believe me I would burn those babies in my bed sleeping).

Fiber one. “Just Add Water”

For ½ of mix you have 180 calories, 6 grams of protein and 5 grams of fiber.  My favorite part is 25% of your daily calcium!  The only thing you have to add is water-but adding milk is my route of choice.   Actually that’s a lie.  If you add ½ cup of Greek yogurt and ¼ cup of water you won’t be disappointed either.  I have used this plenty of times and it is really a plus.

Now for my actual food.

I tried a TLC raspberry chocolate bar.  It was pretty good but I enjoy my south beach bars more before practice.  I’m not the the biggest “nut” fan.

After practice I made chocolate pumpkin pancakes.  But you can’t really taste the flavors.  They kind of loss their flavor while cooking.  Needless to say, pancakes are still pancakes and they were still delicious.  I topped with OIKOS Greek caramel yogurt and a bit of syrup.  As always-my breakfast plate is my my yellow plate.

Then off to make up a quiz I missed from Friday and to go to Sports Psychology.  Both were uneventful.  I spent another two hours in the library doing some homework.  During that time I consumed an apple and Greek God yogurt.

I had lunch with Bonna again.  YAY!  I miss her, now that cross country is done, I need to see my friends somehow and when am I not eating?

Aram made dinner tonight.  With the biggest sweet potatoes in the world.  He made grilled tuna, corn muffins and baked sweet potatoes.  It was delicious.  I am super full now.

I actually don’t have too much work this week surprisingly.  Being a math major-you have homework or you don’t.  No long term projects or anything.  I’m flying home though a week from Tuesday.  I hope there are no delays.  Anyone know of any good restaurants around Syracuse, New York?   (big thumbs up for pancake places ha:))
