Coconut Pancakes

If you follow me on twitter-then you know about a month ago I bought some coconut oil.  Not only is it a miracle worker on my feet (um yeah that’s not where this blog is going) but I have created a few good recipes using it (but also easy and well…with breakfast!)

It makes sense that I start with pancakes right?  (These are extremely high in healthy fat!) 

½ cup flour

1 egg

¾ cup coconut milk (you can add more/less…this is just how I like my pancakes)

1 tablespoon coconut oil

1 tsp baking powder

Pour and put on the griddle!

*I also added ½ cup blueberries because I was feeling it

Another coconut option I was thinking was dark chocolate+coconut+flaked coconut…so many options!
