I think my father secretly likes being referred to as the daddykins on the blog. It makes him feel so famous. I think he also gets tired of me rambling off about my blog in true life but I’m wearing real girl clothing so there is only so much I can do.
Hmm, Thursday was a big day for me. I became-Hollie-ultra domesticated female. I did some baking (peanut butter cookies), cleaning, and even laundry.
I really do believe if I wasn’t so sassy, I could just go major in professional housewife blogging, running, swimming woman. I feel that is a pretty standard degree at most colleges.
I’m glad you guys enjoy the new header. I actually hated the other one but never got around to changing it. It is my summery and joyous, kinda ,like me. Now I suppose I can look at my own blog once in a while (like déjà voo?).

Today was not too exciting of a day sadly. I made a waffle before heading off to the pool which is where I spent the majority of my day.
I hate eating on the run but when I do 99% of the time, it is a tuna fish sandwich. It’s kinda like my staple lunch at the moment. Between helping new guards and eating, I managed to get a tempo run of 8 miles in there somewhere. VA weather was glorious today as it wasn’t too humid or hot.
I do feel the need to share with you the most delicious dinner that I made last night. I got it of all places off the back of the cheese package. I’m kinda in love with cheese with mozzarella, cheddar and feta and parmesan being my favorites. Oh wait-crumbly bleu cheese. No and goat cheese.
Okay yes-cheese is good.
Anywho without further ado (and you know all my recipes take cerca de 15 minutes or less to prepare…).
Ingredients:
2 cups cooked pasta
½ pound Italian sausage
1 package spinach leaves
1 can diced tomatoes
1 cup mozzarella cheese
Optional:
2 tablespoons parmesan cheese
Mass amounts of garlic
Directions:
- Crumble sausage into large deep skillet and cook on medium heat for 10-12 minutes. Stir occasionally.
- Drain sausage then add spinach and tomatoes and cook until spinach has wilted.
- Add in the cook pasta followed by cheese and garlic.
- Then eat (99% of it like I did…actually my brothers were home, I can’t take all the credit)

Not a cheese fan unless it’s cream cheese!! I used to like cottage cheese but I can’t remember what it tastes like? I do love goats cheese though. Again, haven’t had that in forever. Need to buy some soon!
My staple lunch lately has been a fried egg sandwich with avocado and hummus and mustard. YUMMM.
No racing – I’m injured. 🙁 I had a race scheduled for Sunday, but it’s a no go.
I love a couple of different lunches: tomato basil soup (Costco!) is one of my favorites. Other choices: veggie/hummus sandwich on wheat bread. And, I love pretty much any lunch with edamame and cottage cheese (not together).
Your waffles always look SO perfect! You are definitely a professional waffle maker! Mine always looks so messed up….but they taste delicious so I guess thats what counts LOL!

I want to get a degree in housewife blogging and running. I could definitely make a career out of that.
My staple lunch for when I don’t feel like cooking anything is a frozen green giant vegetable medeley (potato, sugar snap pea, and red pepper variety) with a veggie burger and a luna bar or something. Usually I have to pack lunch for school and I basically live off of this overly processed meal during track season.
Yes to cheese! My staple lunch is most of the time leftovers thrown over a salad or a quick & easy egg sandwich.
I love how big that waffle is.
Staple lunch — big salad of veggies with a PBJ on the side.
Weekend plans — another wedding to go to tomorrow!
When I’m feeling especially uninspired, my staple lunch tends to be a sandwich or a salad with wheat crackers. Wayyyyy exciting.

My staple lunch…hmm..since becoming a vegetarian I don’t think I’ve nailed down a staple lunch. I just sort of eat whatever I am feeling like that day weather it be a second breakfast or some leftovers and recently i’ve been eating lunch out way more than dinner! My plans this weekend include watching my 9 and 3 year old cousins-so a lot of time will be spent at the swimming pool since it is god awful hot in Birmingham!
