Too much Greek Yogurt? No Whey!

As some of you know (or don’t), I don’t post every single thing that goes into my mouth. Some things are just not as exciting to post. I got an email; however, on Sparkpeople in I could take a picture of everything that goes into my body for a day. They were curious because on days that I burn 1700 calories, how can I just eat that much and not disappear. This isn’t feasible to photograph every little thing every day but I decided for the next three days everything that goes into my body will be photographed.

5:30 am-morning practice. Coffee and Cliff Z Bar. I’m just trying to work through all these Cliff Z bars I bought a while back, so I can find a new prepractice snack. Similar to when I bought an overflow of Cliff Pria Bars hehe.

Practice today actually went by very quickly and I didn’t mind it too much.

8:45am-I was starving though and basically ran to my house to cook some breakfast. I ended up having a bowl resembling pancakes and oats, I’m not too sure. My pancakes didn’t stay together on the griddle today so I mashed them all up and added athenos blueberry Greek yogurt. My breakfast contained all the following ingredients cooked in the bowl.
½ cup pumpkin
1 scoop Isopure protein
¼ cup egg substitute
½ kashi go lean cereal (crushed)
2 cups strawberries
1 package of Athenos Blueberry Yogurt
It was quite good-just not the most viewable breakfast I have had in a while.

11:00am ¼ cup pumpkin and 4 ounces of Oikos Greek Honey yogurt. I love pumpkin and yogurt and that combination will never get old. It also makes a perfect prerace snack.

Insert a run here. I hurt my foot really badly and don’t think I’ll be running again today. It is the top of the foot but I think it is lingering from the hill workout I did yesterday erg.

1:00pm-A pizza wrap. I used Josephs flat bread flax wrap (from BJS), turkey pepperonis, 2 pieces of provolone cheese, and 4 tablespoons of salsa. I also dipped it in 6 ounces of Greek God Yogurt. I don’t normally have this much yogurt in one day but apparently, it’s a Greek day.

3:30pm-Aram and I made protein cakes. I tried mine with beets and he tried his plain vanilla. It was pretty good but I think I’ll stick with chocolate. Mine looks more like a donut though. Where the middle went is a mystery to me.

5:30 for dinner tonight Aram and I made more Tilapia and sweet potato crisps. One batch seasoned with cinnamon and one batch seasoned with salt and pepper. It was a rather simple meal but I enjoyed it.

Today was a rather productive day getting school work done as well. I finally got some of my education assignments done that I had been avoiding all weekend boo. I like typing papers but this essay was just not my cup of tea.

Incase you wondered, I also had four cups of coffee as well today. Coffee is just brown and unphotogenic hehe.

Mumpkins

Good morning blogging world.  I’m sitting here at 5:30am, rather wide awake enjoying my cliff kids bar and cup of coffee.  I’m about to head to morning swim practice.  I just thought I would type the first line now ha.  J

8:30am-I had been thinking about what exactly I wanted to make for breakfast.  I do that a lot when working out but mostly during swimming.  I had told myself that I wasn’t going to use pumpkin because I was saving that for other occasions such as dinner tonight.  But alas-my cravings got the best of me.  Today I made chocolate pumpkin protein pancakes.

1/3 cup fiber one pancake mix
1 scoop protein
2 tablespoons Hershey dark cocoa
½ cup canned pumpkin
¼ cup milk

Then I topped with PB2 and  6 ounces of Greek God Yogurt.  It was very tasty and I am so pleased with the outcome.  Everyone who said cooking with pumpkin makes your pancakes/cake/muffins so moist, you are right!  I have never had anything more delicious.

Insert a one hour 7.5 mile run.  I ran up and down a two story hill and around a one mile track.  I ran four times around the track and the hill is right in the middle so I just veered off course and ran up the hill for that portion.

After my run, I snacked on the frozen strawberries to cool my body down.  Do you enjoy frozen fruit?  I keep buying them for smoothies but then keep eating them whole.  I would have taken a picture but they were gone in about 2 minutes!

12:30pm Lunch at Lehman Dining Hall.  Today I just wanted the stuffed chicken (stuffed with stuffing) and raviolis.  I had a lot but my body was hungry.  My boyfriend skipped breakfast.  :O  He was very hungry by noon!  I would be too yuck.

2:00pm-Modern Algebra.  Insert lots of proofs but my teacher decided not to give us homework which means I basically have no work for the rest of the week.  Just studying.  I love having rest Sundays and getting all my nonmath homework done hehe.

Insert a 40 minute run.  I did a lot of cardio today but Mondays are my hard training days for running and swimming.

5:30pm-My boyfriend and I decided we would make dinners together on Mondays.  Today we made grilled Tilapia, cooked spinach and shockingly Pumpkin Muffins!

The grilled Tilapia was seasoned with a bit of red pepper and red wine vinegar and when making spinach I always add lots of garlic and onion powder.

To make the pumpkin muffins (which I have decided I named Mumpkins) I’m going to make humerous names for all my pumpkin creations this month. I added 12 ounces canned pumpkin and 1 package of cornbread muffin mix.  Aram was skeptical at first (he always is when it comes to my cooking.) but he loved them!  I loved them too.  He ate them plain but I added a couple tablespoons of Orange Marmalade.

Then off to teach swimming lessons.  It’s week three which means only one more week to go.  I enjoy teaching the lesson; it’s just another thing on my plate.  For our annual trip to Puerto Rico, we are required though so I would rather suck it up and teach lessons then not go…besides I don’t have much work this week anyways.

Mine is Salmon, although I’m generally a fan of all seafood.  :)
