Pineapple Upside Down Waffle

One of my favorite fruits is pineapple.  I know a few weeks ago I said strawberry…but come on…how can you hate on pineapple?  With that being said pineapple upside down cake is another favorite cake of mine (besides lemon cake).  Okay so fruity trends have always been a sort of theme of mine clearly.

Pineapple Upside Down Waffles

Here is the thing…it doesn’t take a lot to make these.  Some pineapple…some whip cream and you are golden.  (or yogurt if you would rather).  Then after thinking, I thought to up the tropical theme and add coconut too. 

Ingredients:

½ cup flour

½ cup pineapple chunks

1 egg

1 tablespoon baking powder

¼ cup sweetener (or how much you like)

¼ cup shredded coconut

Water/milk to consistency (or even pineapple juice)

Mix dry ingredients to wet and then add shredded coconut and pineapple.  Pour into griddle.  Top with yogurt or whip cream.

Love yourself (and Quiches)

Last night was enlightening to say the least. Anywho, I was going to get my run in today before class but decided I would wait till after and sleep in. Waking up at 6 after falling asleep at midnight, is not okay with this girl.

But that gave me time to make a Pineapple Waffe! I had bought a can of crushed pineapple from the grocery store because I missed the little guys. Everyday back in middle and high school instead of chips my mom would pack me pineapple. Ha. I hadn’t had it in a while so I knew there would be some use for it in my cooking life.
I wish you could see the pineapple ah. But believe me it is in there and added a nice surprise when it hit my mouth.

Spinach Quiche

Ingredients (makes 6 servings)

6-oz fresh baby spinach
2 large eggs
1/2 cup egg beaters (liquid substitute)
1/2 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
pinch cayenne pepper
1 1/3 cups non fat milk
1/2 cup feta cheese

Directions
Preheat oven to 400F.
Lightly grease a 10-inch quiche/tart pan (or a pie plate)
In a medium frying pan, cook diced onion with a bit of vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then stir in spinach-onion mixture.
Pour quiche base into prepared pan. Top with feta cheese.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.

We were so shocked it came out well. Both of us are only pancake champs...

And finally Triple Tangent Tuesday. I’m going to go with 3 Things that I love about myself.
1. I’m positive 99% of the time. I mean sure we all have rough days and negative days, but I tend to have a more positive outlook on life.

Always smile! (and never play with your food...obviously)

2. I’m so socially awkward and can get away with pretty much anything. Over Halloween people asked how the hell I came up with being a pumpkin and all I said was I’m Hollie Heimer and that’s what I do. Confidence is key and if you don’t have it in yourself no one else will for you.

3. The mole on my lip. Yes, I have a freckle on my lip and no it’s not a chocolate stain ha. But I love it and no dermatologist (and dentist actually too) is going to tell me it I need to get it removed.

You can barely see it but its there I swear!

Santa Brought Me 12 Hours of Sleep

My entire blog that I wrote crashed in the middle of the night between Christmas Eve and Christmas. Oh Boo. That is okay though because I think I fell asleep around 9 and woke up at 9 the next day. My body must have been running on empty.

Anywho-I’m decently behind in the getting to know me days so here are days 8-10. I’m not lazy I swear!

Day 8: A photo that makes you laugh.
My cat because one day she’ll be a famous lolz cat. My cat is such a diva and I love it. I miss her so much as school and she sleeps right next to me every night. Well sometimes she decides my head is more to her liking.

My cat is also Americas Next Top Model.  Basically if you live in my life you are destined to be ANTM.  (I don’t have an addiciton with that show-I swear.)

Day 9: Someone who has been with you through thick and thin.
Easy Peasy. Anna! She has been my best friend since 7th grade and believe me if you could talk to me then, you are true friend. You think I’m socially awkward now? Just think of me during awkward middle school times ha. She is such a great friend of mine and I don’t know what I would do without her.

Woo now that we got all that out of the way, do you feel more enlightened on my life?

I woke up today at 9am. I had already received about 10 text messages wishing me a Holly Jolly Christmas. Some people just think they are oh so clever. I also got a few texts later asking if I was going to deck their halls. As if it was some sort of new joke. I’m not even born in the Christmas time, I’m born in July. I often wonder if I was named after the Holly tree that grew beside our old house. Ha.


For Christmas I got a Nikon D70! I’m so excited. You think I’m an obsessive picture taker before? Just wait until now. Nothing can stop me.

I also got some new jeans, boots, another starbucks coffee mug and warm socks. I collect coffee mugs so my brother normally gets me a new starbucks one every year. Did I mention Anna got me 1000 more headbands? I think my parents (or Santa) were trying to say something getting me “legging jeans” from the gap. They always make fun of me for not wearing jeans. I do love gap jeans though so I’m super excited for more.

My brother, Matt, got a bunch of new ridiculous running clothes. If you thought I liked my obnoxious running clothes, he is 10 times worse. As seen by prerunning 10 mile photo. My brother Matt, me and my dad go for a nice long run to get out of my mom’s hair while she is cooking. My other brother Steven, who is not interested in running anymore goes off to BMX bike. We went for a nice 10 mile run around the neighborhood and area. I love running with my brother and dad. It is such a nice change of pace versus lonely runs.


I made baked pineapple for the family. It was such a hit at school, I thought why not make it at home. This time I use cinnamon bread which is delicious. I never thought pineapple could go so well with everything.


Our dinner is always similar to Thanksgiving and we had turkey, mashed potatoes, stuffing and a mixed assortment of veggies.

I have also been compiling my half marathon schedule for the next six months. So if there are any near you let me know (that is including you are okay with having to deal with me for 13.1 miles plus before and after the race. It’s totally understandable if you aren’t.)

Do you prefer skinny jeans or boot leg? (or bell bottoms?)
I personally love skinny jeans if I’m going to wear any sort. But not too tight. I hate tight jeans and refuse to wear them. That is also why I have a small collection of belts. You will see more of those as the summer progresses and I decide it is jeans and shorts time.

Breakfast for Dinner?

My week started oh so well, when I tripped and fell down the stairs spilling my pancakes and breaking my favorite plate. The mellow yellow favorite plate.

But sadly I didn’t have to wake up for practice this morning. So I woke up at 9 and made peanut flour pancakes. Then topped with chocolate pb2 and Fage yogurt.
I learned, yesterday while watching The Great Baker, the worst thing someone can say after eating something peanut buttery is “man I need some milk.” So that’s why I topped with Fage, so I didn’t need any milk hehe.

I went to the gym for an easy 6.5 mile run and some more core exercises. My core is becoming a bit weak lately (and thus my butterfly kicks are suffering boo). I could also catch up on Say Yes to The Dress from 11-11:30, which is my favorite show to run too. Although most things on TLC have got my heart.

For lunch, I went and had a Hollywood Hill wrap at the union. The wrap was a basil based wrap, with rice, chicken and chedder cheese. Also included was mayonnaise but I asked for none of that. Mayonaise and Hollie just do not and will not ever get along.

Plus salad number nine. This was a salad inspired by Chick-fil-a’s fruit salad. I had spinach, grape tomatoes, pineapple, maderin oranges with carrot shreads and a bit of feta cheese.

Then I went to swim practice. It isn’t hard this week like I said earlier since a lot of people can’t make it due to exams and exams schedules.

I got done with practice in about an hour and forty five minutes. It was nice to just relax and stare at nothing versus studying for a while.

 

Then for dinner Aram and I made biscuits and gravy. I stole the recipe off of the carbquick box for the gravy mix and used a standard packaged mix for the corn muffins.
(hehe and you thought I was going to have pancakes for dinner didn’t you?)

These are my kind of recipes so easy.
1 cup sour cream
1 cup water
¼ cup carbquick

This is what I used:
1 ¾ cup Greek yogurt
1 cup water
1/3 cup Carbquick
1 tsp garlic salt
1 tsp onion powder
1 cup ground sausage

Add everything and boil for about 3-4 minutes. Just enough to warm it up.

If I had thought about it earlier-I might have added sautéed mushrooms into the mixture.

Oh so appetizing...

Baked Pineapple

Baked Pineapple

I have to be honest-until I went home for break over Thanksgiving, I had no idea this stuff even existed.  I wasn’t even excited to go to the restaurant my parents chose (because my favorite one is right next door).

Wow-that fateful night was life changing.  I have been scouring the internet for a baked pineapple recipe.  I have ended up combining about 5 of them to create the perfect one.  So if you need a brunch item, or a side dish for your salmon, or even a dessert, this babys for you.

Side note-I just thought of chocolate sauce on this baby girl and it would be the perfect dessert.  I know what I’m cooking.

Without further ado.

1 20 ounce can crushed and drained pineapple

2 tablespoons flour

½ cup sugar

1 egg and ¼ cup egg whites

3-4 slices of bread cubes

3 tablespoons melted butter

1 tablespoon sugar-1 tablespoon cinnamon

 

Mix pineapple, flour and sugar into bowl.

In separate bowl, beat egg and add egg whites.  Mix with the pineapple.

Pour all of this into a lightly greased pan.  I chose a pie pan.

Press bread cubes into the mixture, covering the entire surface.  (Maybe yours were more cubed than mine…The crust is also my favorite part of the bread so I kept it)

Mix butter, cinnamon and sugar into separate bowl and pour over top.

Cook for 50 minutes at 350 degrees.
