Foodie Pen Pals

Foodie pen pals has become one of my favorite monthly topics (so if you are tired of them..well it’s once a month-stop that and come back tomorrow).  With that being said, this package was def awesome and Amy even was able to take into account that I am eating a high protein diet and have a couple of medical problems (is she not the bomb?!).

Because I like to give rhetorical questions in my blogs, I’ll answer and say-no duh. 

Right then. 

 

First she sent me sugar free chocolate covered nuts.  I tried one of them and then decided I wanted to eat all of them.  Literally within 30 minutes of opening the box they were all gone.  They were really good!

After devouring the nuts, I decided to hold off on the cookies for some time later in the week.  These were a perfect work snack for me.  Work has been really busy and stressful and having cookies at work…well it makes it a little better.

Next up was the mustard.  I have never been a mustard fan but decided to try it anyways It was so weird-because I really enjoyed it.  I added it to some chicken we were having that night and it didn’t disappoint.  My parents were shocked that I eating it, and then my mom decided she wanted some too (to which she fully enjoyed it).

Hiding back there is the edamame, which is one of my favorite work snacks.  I buy this on the regular so it was nice not having too LOL.  I also ate it at work.

The steel cut oats I used to make pumpkin oatmeal.  I haven’t had pumpkin oatmeal in ages and this was the perfect occasion.  Quite delicious per usual.

With sprinkles. duh. 15 extra calories of worth. Well probably like 45 because I just kinda dump a bunch in.

Then last (but not least), I’ve been sipping on the herb tea all week.  My mom is a big tea drinker and absolutely loves this stuff as well.  Me personally, I like coffee but tea is good every once in a while.  This tea is certainly at the top of my list though so I’ll be taking it back to college.

My name is Hollie & I bake chocolate chip cookies

As promised (to you, me and whoever else insisted I need to know)-I am learning how to cook and bake.  It is my senior year after all and I cannot depend on others too cook for me forever.

 Plus-recipes aren’t hard as long as you follow them (at least in my mind that is what I think).  I complain that cooking is hard but it was explained to me in very common terms.  You follow a recipe exactly, you get what it says.  Aren’t logical people fun to be around?

I’m not going to go all crazy and invent my own recipes (sans pancakes) but this is where I’ll start.

I hesitate to say how many this recipe is supposed to make.  It said online 36, but we are fatties and I made the dough into about 20 hugh jass cookies.

I ate about five of these in one sitting. No big deal

Ingredients:

3/4 cup butter

1 cup Stevia (cup for cup substitute for sugar…if it doesn’t have much sugar it must be healthy. )

1 cup light brown sugar

1 1/2 teaspoons vanilla extract

2 eggs

2 cups sifted whole wheat flour

1 cup all-purpose flour

3/4 teaspoon baking soda

1 teaspoon salt

2 cups semisweet chocolate chips

 

Directions

Heat the oven to 375 degrees F.

In a medium bowl, mix went ingredients and the brown sugar.

In a smaller bowl, mix dry ingredients.

Fold in dry ingredients to wet ingredients.

Mix like it’s your job and fold in chocolate chips.

Divide and put on cookie sheets.  Bake for 13 minutes.

Isn’t cookie making fun?  These are very floury (similar to a boxed cake cookie design).  I am so proud of my (mostly the main mans) accomplishments.

Oh look I had a weekend life (somewhat)

Anyone else love that song by Fleetwood Mac, Monday morning? Random but it’s stuck in my head. 

Anyways-I normally don’t have very eventful weekend recaps because I don’t do very much.  Well not much interesting stuff that is.  This previous weekend was a bit more exciting so I decided I would chat you guys up about it. 

So Friday I had my interview for a possible internship.   I was super nervous and no I did not wear leggings…though I’m sure I would have gotten the job immediately if I did. I can tell you that it went really well.

Later that evening, I went to dinner with Jenna (a good friend of mine) at my favorite restaurant to celebrate.  They have the most delicious salads in the world and I got my typical goat cheese salad with grilled chicken and all the other random veggies.

Then at about 10pm (after watching America’s Next Top Model online with Laura!) I was inspired to make chocolate chip cookies.  I’ll be starting a somewhat series of recipes on the blog.  They will be easy because for those of us who cannot cook (ie me) we start out slow.   My main man loves cooking and baking so hopefully he will help me out with that….

I ate about five of these in one sitting.  No big deal

Moving on….

Saturday was a rather lazy (but fun) day.  I was able to get a run and a swim in.  And not just any swim-my longest swim post collegiate swimming of 4200 yards.

It went something like this:

3X1000 pull (to work on my arm muscle)-3X400 IM (because I like that). 

 

Later that night Jenna and I also went to see the movie the Vow.  I won’t post spoilers incase you are interested but I really enjoyed it.   I would certainly recommend it to anyone.

And now on to Sunday-

Sunday was a little bit more layed back and of my typical demeanor-I literally slept and worked on homework all day long-I also wrote a few good blog entries I think too.

During my long run (11.4 miles yesterday)-I did manage to stop at roughly the 5.5 mile spot and see my best friends were out and about.  Isn’t 15 degrees too cold for you guys?  I wonder why they didn’t respond to me…weird.

Don’t Leave Me Home Alone

I think my father secretly likes being referred to as the daddykins on the blog.  It makes him feel so famous.  I think he also gets tired of me rambling off about my blog in true life but I’m wearing real girl clothing so there is only so much I can do.

Hmm, Thursday was a big day for me.  I became-Hollie-ultra domesticated female.  I did some baking (peanut butter cookies), cleaning, and even laundry.

I really do believe if I wasn’t so sassy, I could just go major in professional housewife blogging, running, swimming woman.  I feel that is a pretty standard degree at most colleges.

I’m glad you guys enjoy the new header.  I actually hated the other one but never got around to changing it.  It is my summery and joyous, kinda ,like me.  Now I suppose I can look at my own blog once in a while (like déjà voo?).

Today was not too exciting of a day sadly.  I made a waffle before heading off to the pool which is where I spent the majority of my day.

I'm not sure why my blueberry jam looks redish. Either way it was still nomtastic.

I hate eating on the run but when I do 99% of the time, it is a tuna fish sandwich.  It’s kinda like my staple lunch at the moment.  Between helping new guards and eating, I managed to get a tempo run of 8 miles in there somewhere.  VA weather was glorious today as it wasn’t too humid or hot.

I do feel the need to share with you the most delicious dinner that I made last night.  I got it of all places off the back of the cheese package.  I’m kinda in love with cheese with mozzarella, cheddar and feta and parmesan being my favorites.  Oh wait-crumbly bleu cheese.  No and goat cheese.

Okay yes-cheese is good.

Anywho without further ado (and you know all my recipes take cerca de 15 minutes or less to prepare…).

Ingredients:

2 cups cooked pasta

½ pound Italian sausage

1 package spinach leaves

1 can diced tomatoes

1 cup mozzarella cheese

Optional:

2 tablespoons parmesan cheese

Mass amounts of garlic

Directions:

  1. Crumble sausage into large deep skillet and cook on medium heat for 10-12 minutes.  Stir occasionally.
  2. Drain sausage then add spinach and tomatoes and cook until spinach has wilted.
  3. Add in the cook pasta followed by cheese and garlic.
  4. Then eat (99% of it like I did…actually my brothers were home, I can’t take all the credit)

Blerg-I’m doing a triathlon.  I”m more nervous then god knows what but we can chit chat about that tomorrow.  Oh and aDuBs is doing a 5k so go wish her luck.

 

I’m Giving up Hot Cocoa and Coffee For Milk Coconut Chai Tea

So I committed the ultimate Blogger fail yesterday.  After meeting up with Katelyn, I realized I had left my camera in the on position and therefore it had died.  Imagine that…I’m the most observant and intelligent person and pulled that move.

So my dearest blogging BFFS.  You will be forced to deal with Katelyn’s awesome photography (aka much better then mine hollaaa).  Before I begin, I must say while waiting for Katelyn to arrive, Aram and I watched someone getting a sobriety test.  At 6pm…they failed but in the three years of my college times this was the first time I had ever seen it.  It was quite interesting.

I have to admit, I had never ever been to a Vegan Restaurant before and it was seriously the bomb.com.  I was a little worried that I wouldn’t even begin to know what to have but it was amazeballs.  Since this was her favourite restaurant, she ordered for the table.  We ended up getting five different dishes and splitting them each.

The chai coconut tea makes  me want to give up coffee and hot cocoa for the rest of my life.  It was the best 4 dollars, I have ever spent.

The Ethiopian Lentils were by far my favorite.  Can I just live off these?


So in short if you are ever in Rochester, go eat your little heart out at Natural Oasis.

Afterwards we went to her house for some Biggest Loser Bonding and cookie eating.

Oh by the way, Katelyn’s cookies are delicious and I plan to recreate her concoction at school-along with fried plantains.

I was also able to try her signature Quinoa-Hummus-Raisin-Balsamic Bowl and let me say it doesn’t disappoint.

Incase you wondered, I indeed had a fabulous time, so shout out to Katelyn and you should all meet her.  Right now.

This morning following a date with the Arctrainer, Aram made us scrambled egg sandwiches with ham.  That is his favorite postworkout meal.  Since I’m at his house-when in Rome?

I actually didn’t have pancakes or waffles at today go figure…

Anywho, Aram and I headed to Syracuse to meet Caitlin so that I may get back up to school.

Please don't mind that I look like a 12 year old.

We stopped for an extremely late lunch at Ruby Tuesdays.  I had like 20 salads (because their salad bar wins) and salmon with spegetti squash.  I had never actually tried it until today and I love it!  YUMMY!

5 million rounds of salad...YES

Does anyone else agree that Ruby Tuesday’s Salad bar is the best part of restaurant?  As much as I like their entrees, their salad bar is what brings me back.
