The Only Time I have ever opened a box of Ricearoni

It seems like just last week that I was rambling off about all my plans for being home and how excited I was that finals were finally over.  Oh wait.

It was about 11 days ago.

Christmas is always a hard time of year for me because I’m extremely close to my family and only getting ten days off; while my friends have a month and a half takes its toll.  Hopefully Puerto Rico will keep my mind off things.

We do get internet in the hotel so I’ll probably type up a few posts while lying out at the beach.  I’m not one to just lie and sleep, that really bores me so anything to keep my brain occupied.

This Christmas Break was fabulous and I did a lot of fun things.  Although a lot of my family bonding and blooming friendships went unphotographed, I did capture a lot.  Now I can capture more with my baby Nikon.

But anyways, I’m rambling on and haven’t told you the best part.  If you follow me on twitter you saw-my flight was delayed and then canceled.  So I am back at home until Thursday!  I’m not even going to my college before Puerto Rico.  Which is so great because half my summer clothes are at school.  The other (not-so-cute) half is here and will be what I’m representing.

I don’t think you get away with Uggs, a long sweater and leggings in Puerto rico.

So this is rather anti-climatic.  I had said I needed a few personal days off but life never goes as planned.

I had anticipated being back at school today and that is where all my personal problems lie.  Back home-I am worry free.  I need the break once I get to school so after Puerto Rico in the middle of January, you can expect me to disappear for a few days.

But anywho here is what I have been up to the last few days.

Having multiple photo shoots with myself.  SLR cameras are a lot harder to do that ha.

 

Watching the sunset at an airport when my flight was supposed to leave at noon.

Ordering a new phone.  I hate hate hate touch screens.  Call me grandma, but I have big awkward fingers and I press the entire phone before I press a button.  I loved my Alias 2 and they discontinued it.  I searched eBay and Craigslist but then found out the zeal is rather similar so purchased that online.

Then finding my phone in a snow bank.  We didn’t have any rice left and apparently that gets all the snow/water out.  My brother had the grand idea of putting it in rice-a-roni.  Aka the first and last time I open a box of that.

Just to humour you. Is this even how it works?

Chickfila chargrilled fruit salad are my absolute favorites.

Nannercakes make the best pancakes.  I had forgotten how moisty and fluffy these pancakes become.  This is also roughly the size of a dinner plate ha.

ChocoNanner Muffins

This recipe was inspired by two blogs that I also follow like it’s my job. No really? When will this become my job. Middle school children need no help with math…
First I took Shanna’s banana scone recipe. Then because I didn’t have a cool pinwheel scone maker, decided I would make muffins. I also cut the recipe in half because I was just making them for Aram and I.

The name came from Faith, Food and Fitness and her love for using the words nanner and tater. Now I do it too!

Without further ado:
Choconanner Muffins:

½ cup wheat flour
1/3 tablespoon baking powder
¼ tablespoon canola oil
½ cup mashed nanners
¼ egg substitute
1 tablespoon chocolate chips

What do do:
1. Mix dry (except chocolate chips) ingredients.
2. Mix wet and mushy.
3. Add together and then fold in chocolate chips.
4. Bake at 400 degrees for 12 minutes.

While your eating them you can read their blogs too like I did.
