This morning was my 8am acalc final.  The class is normally at two pm, and that is normally the perfect amount of time for my little brain to prepare itself to think of those terms.

But the final went okay, it didn’t go as well as my first one (but the class is about about 10X harder…) but it wasn’t as bad as my math class last semester.  So I’m pleased for it to be done and for me to be done with it…but more to that later.

Tomorrow I have my big coaching portfolio due, but I’m done with that.  It was luckily shorter than my teaching portfolio de 50 pages.

So tonight will be filled with packing.

I was going to do what I eat Wednesday but since I eat the same things-how boring. 

Fun facts of my day, Justin came over and if you live in my life you know I blog about everything.  You must be prepared in all situations and you must agree when I say ohhhh please its for the blog and you’ll be famous.


Justin was way too prepared-already making his nanner waffle look the bomb.com.  That is why we are Arctrainer besties!  He knows how to really fix up for some good food photography.

As far as Monday is concerned.  You’ll be happy to know that actually the winner of swimming versus running is….

Running…only by two votes though.  I voted for swimming, and no the furthest I have ever swam in the open water is 2 miles and when you are a mile out from shore it’s rather scary.  I feel those races 10 fold more than half marathon…

Thank goodness it’s Friday.  Not that I really have anything to do with my life.  Incase you wondered, life and thrift store shopping got in the way last night so I have to finish to my HCG paper tonight.  Well-I don’t have too but it’s a goal I have.

This morning I woke up at 6:30am on my break and on a Friday.

I was going to run later today but my joints are still stiff.  Shoot me but I want to do well at my next Half Marathon so I’m not going to die by cutting my miles in half this week.  Also-I have been hardcore working out the entire last month so my body needs a break.  I literally layed around like a bum today.  It was awesome.

I made some fried plantains and had a lot of peanut butter with them.  I’m going to have to guess this is probably about ¼ of a cup but I dug my spoon right in there.

Then I got my hair cut.  It’s pretty short for me but hopefully it will grow back quickly.  I’m not to concerned, I just got those dead ends off.

That tie dye shirt is my brothers-you know that sister I could never steal clothes from?  Well I have my brother to steal his clothes and he just gave me a bunch of sweet running shirts that don’t fit him well.  It’s nice to be the same size as your brother…well it’s nice that he wears a unisex small like he do and doesn’t get in a tizzy when I steal his things anyways.   Matt and I extremely close and that is just how we role.

After my power nap , Anna and I were supposed to go to Ruby Tuesday’s tonight but it was a terribly long wait.  So where did we go?

Guest Post of My Straight Hair Real Girl Twin

Um since 1000 people did races today, please rave about your race in the comments section.  I thought of each and every single person that told me, when I was laying in my bed.  Under lots of covers and reading your blogs.  I raced downstairs to make a waffle if that makes you feel any better.

On another note-I am a bad blogging bff.  One of the blogs, that I have been reading for seriously about 5 months now-somehow never made it my blog roll!  It was like I was keeping one of my favorite blogs away from you guys, in secret!  (kind of like how I hoard pumpkin and pancake mix….) but anywho-Go check out Jaime’s blog now!  She is fabulous and loves waffles almost as much as I do.

Today I went to the gym around 10.  My legs feel awesome-seriously-and I have debated running.  BUT.  I want to still play it safe so I purposefully left my running shoes (baby Newtons) at home and brought my cross training Pegasus.  That way-I would most certainly not be running.

Then it was off to Julies house in Northern Northern NY.  You see, I go to school in Northern NY about 10 miles from Canada-so you’d think I’d be at the very top, but you can go a little East and find an even more Northern part of NY.

This was a big day for me because of two things:

1.       I straightened my hair

2.       I’m wearing pants.  I have not worn pants since Feburary 20.  I only know this because that is the day I fractured my heels on the treadmill and gave up pants forever.  I should have given up pants for lent.

Julie didn’t even recognize me.

Who is this girl?

We had some awesome noms at local restaurant.  I got my salmon of course.  I was infatuated that they gave popcorn as an appetizer and a giant salad.

After half was in my belly.

Except I don't like onions

Then my salmon, corn and baked potato (without ketchup-2 weeks strong!).  I’m actually really happy of how well that is going.  (I gave up lent for Ketchup).

PS: I finally made some Nanner softserve and I love it.  Always add sprinkles-obviously.

I just used bananas and Greek yogurt.

Incase you don’t know your Northern New York geography, there are a lot of hills.  As in we are in the Adirondacks and you vary in elevation every five seconds.

Peanut Butter Nanner Bread and 43 Headbands

Last night, I layed in bed, did some painting and watched the Craigslist killer. I have bought a few odds and ends off of Craigslist but I think I may be too spooked for purchasing things there right now. It was a really good movie though and if I hadn’t been getting sick and took Tylenol PM, I’m not too sure I would have slept very well.

I’m glad I don’t live in the Chicago area because she has practically owned every single road race out there. Anywho-Welcome to the blogging world Colleen. :)

To begin my day, I distinctly remember this practice set from last year and being the two hardest practices of the entire season. Needless to say, it doesn’t get any easier this year.

400 swim
2X(100 breastroke-50 kick-100 back-50 fly)
8X250 Free interval
200 backstroke
16X50 Timed
400 kick
4X25 kick sprint
500 Pull
2X50 off the blocks
4X200IM

After practice and a house girl chat, we went to Quiznos. My how I have missed my steak bistro melt. Nom nom nom.

Then it was finally time to cook Di (from Treadmill Diaries) Peanut Butter Banana Bread. I omitted the glaze because I am enjoying mine with chocolate peanut butter and jam.

Oh my god. I’m so glad I finally made this. Di there is a reason I want to steal all of your recipes.

Peanut Butter Nanner Bread (16 servings)
Ingredients:

• 2 bananas, mashed
• 1/3 c low fat Greek yogurt
• 4 T peanut butter
• 3 T light butter
• ½ c egg whites
• ½ c white sugar
• ¼ brown sugar splenda blend (or ½ cup of regular brown sugar)
• 1 c all purpose flour
• ½ c peanut flour
• ¼ ground flax
• ¾ tsp baking soda
• ½ t salt
• ½ tsp each – cinnamon, allspice

Cooking:

• Preheat your oven to 350 degrees
• Mix together the first 5 ingredients in bowl.
• Add in both sugars and blend well (by hand or mixer)
• Combine flours, flax, b soda, salt & spices in another bowl.
• Mix and then combine with banana mixture
• Pour batter into 9×5 pan coated with cooking spray
• Bake for 45-50 minutes (or until knife into loaf comes out clean)

The second practice was as much as hell as I remember. I hate to be Miss Negative Nancy and I know this practice is so good for you but it will always remain immensely difficult.

I don’t normally discuss my times or pace on my blog because everyone swims and runs at a different pace. I don’t even compare my times to other girls on my team because it just creates drama. Oh so and so beat me today? Oh no what will I ever do with my life… At least with the distance girls, it’s not close, you don’t have touchouts by a tenth of a second. I would hate to be a sprinter and actually Breastroke is really competitive on our team too. Anywho-Today I held 27s for all the 50s so I was rather happy about that.

Timed fifties aren’t (and will never be) my event to begin with but after 2000 yards of hard swimming in the morning and 3000 in the afternoon, I am actually really happy with that.

So as with last year, this was still the hardest practice set and I expect next year it will be too.

I have way too many headbands, coffee and jeans (I can’t tell you the last time I wore jeans…I’m thinking the day before Christmas) that I don’t need to buy anymore. I have decided I cannot purchase any of them until further notice. I literally think I have enough coffee for the next 6 months. Perhaps I’ll share a photo of my coffee addiction tomorrow.

Nom Noms of the Cold…Bacon Burgers!

I’m not one to double post a lot because I think it takes away from one post. Since Puerto rico, I have been eating though I promise. I thought I would just add a few photos daily from Puerto Rico for a while because that captures more of the moment then my rambling.

On a side note, I haven’t said anything on my blog that I wouldn’t say to people in the “real world.” I just found out (which makes sense of why my full name has over 100 hits to find my blog) that some of my fellow teammates read my blog on the regular. So here is a shoutout to you guys. Comment if you would like. :)

Before I begin my blog-I have to share this photo of the Baltimore Ravens airplane at my airport.  I actually watched the Ravens game today, so Holly would be so proud. I wish my plane hadn’t been leaving so I could have seen them come out. I feel since I’m such a superstar famous people and I don’t really ever see each other. Bahaha.

Nom noms!
I like to pretend I have been productive without school and work. I did come out with a new way to indulge in pancakes. So there.
Dark Chocolate peanut flour banana pancakes
Now isn’t that a mouthful? It was only a matter of time before I found a recipe to combine the three to make something so delicious. I love peanut flour, banana, and cocoa powder so it was destiny.
1/3 cup peanut flour
1 small mashed nanner
¼ cup dark chocolate cocoa powder (I like Hershey’s special dark)
1 tsp baking powder
Water or milk to constancy

Sweetener to your taste (I used 2 truvia packets) but I like tart chocolate the best.
Mix and cook on griddle.

Dark brown pancakes, how can you not be appealed?

For dinner on Friday night, I made mashed taters, steak and steamed veggies. This was actually the best steak I have ever made by myself so daddy would be proud.

Kelsey and I made raspberry pancakes after our first practice on Saturday.

Then I got pancakes at Foxy Roxy’s this morning. The cute ladies all said they missed me and I met some new friends wondering where I pack these cakes down. I am convinced when I get out of college, all my friends will be 60+. I’m okay with it.

nom nom nom. I wish I could eat these every meal.

Two recipes in one post. I must be overzealous I suppose but I made bacon burgers for dinner. I’m not sure if I have mentioned 1000 times but I’m not normally a burger fan. In fact, I can’t even remember the last time I have had one. Something about them just doesn’t appeal to me. Grill me some hot dogs and steak. But anywho-I got the recipe from a book I was given.

Bacon Burger: (makes 1 serving)
Ingredients:
2 strips bacon
1 tablespoon egg substitute
1 tablespoon breadcrumbs
¼ pound ground turkey
1 tablespoon parsley leaves
1 teaspoon Worcestershire cause
1 teaspoon minced chili pepper
1 slice American cheese
1 hamburger bun
Toppings:
I like spinach and tomato personally with a bit of ketchup.

Directions:
1. Place a medium pan over medium-high heat. Cook bacon for 3-4 minutes until crisp.
2. While the bacon is cooking, combine egg substitute and bread crumbs. Add the turkey, parsley, Worcestershire sauce and chili pepper. Shape the patty.
3. Cook patty for roughly 2 minutes per side in pan. Wrap the bacon around the patty. Add cheese and bun and waaalaaa.

For me having a burger was a big deal, because I haven’t had one in probably five years. So my trying new things led me to success again. NOM NOM NOM.

I love heels and wedges. I have always walked on toes (I couldn’t tell you why) so they are actually a lot more comfortable. I rocks heels or wedges whenever I’m not wearing boots ha.
