Lunchtime Leftovers

Tis the season to still be jolly (one would hope!).  Or use all your left overs and no, I’m not making turkey and stuffing pancakes, can you say ew? Mom and I (mostly mom) did come up with a great way to use leftovers and all this Chobani that I’m loving.

I hate to call anything I help to make a recipe considering it’s easy (and I’m clearly no Betty Crocker) but you know we all start at different points in our cooking skills.  Mine just happens to start at that easy bake oven level.

Turkey Salad

 

All your delicious leftover turkey (or roughly 2 cups shredded).

¼ cup almonds

½ cup apple slices

½ cup Greek Yogurt

Add everything and mix. 

I’m thinking you could make different specializations with this.  For me personally, I might integrate vanilla yogurt and cranberries because I like the sweeter things in life.  Dad doesn’t have a sweet tooth (at all), so this was perfect for him.  He is a mayo addict and even agreed it was perfect for a sandwich and was okay that it didn’t have mayo.

Red Feet

True life amused me a lot.  HA, I’m glad each of you guys could be besties with me.   

Today I just woke up for the hell of it at 6:15am.  No I didn’t have a reason and I didn’t even want too, but my body was wide awake ready to rise.  So why lie in bed when I could be productive…I guess.

It gave me plenty of things to do for two and a half hours before class at 9 though…like have a delicious waffle.

 I need to dedicate a large chunk of today’s blog to a beautiful and delicious waffle I had today.

There are also apples baked in but I cut up a large apple for maximum toppage

I had been craving apples all week but the ones at the supermarket were blechworthy.

Oh yes and I had time to get ready and be a real girl.  It’s so warm out so I must stop wearing leggings and wear my favorite clothes haLeggings are hot and uncomfortable and I decided anything I haven’t worn in the last three months is being donated.  Yes after beginning to pack-I still think I have too much crap.

I couldn’t quite capture photos of my face and my outfit at the same time, it was blurring up or I just have no skillz.

So here is my outfit.

Tie front khaki skirt BCBG.  Black ruffle zip tank BCBG.  Hot pink top underneath AF.

And here is my face.  Oh look nothing has changed since my photoshoot yesterday so hopefully you still remember who I am.  I always thought if I switched my picture one day…would people even notice.  Maybe I already have….

But this is really me I swear...this time.

If you aren’t a dailymile friend of mine, I will relive my running to you today.  This might be a little graphic for you. I got two huge blisters about two years ago (no really I don’t think they will ever leave…) and they finally popped and started bleeding today in the middle of my run.  I have never been in so much pain while running.  EVER.  In fact, I was basically balling my eyes out at mile seven and had to stop.  I swore to myself to finish my miles later after taping and bandaiding up and changing shoes and socks of course.  Anywho-a few hours later I finished and felt awesome.  I don’t have a problem not running for stress fractures/muscle problems/ect…blisters is another issue in itself.

Well blogging besties.  I’m off to my athletic awards banquet.  I’m not sure who to sit with cross country or swim team…save the drama fo yoo mama.

True Life Panera Addict

Thank goodness it’s Friday.  Not that I really have anything to do with my life.  Incase you wondered, life and thrift store shopping got in the way last night so I have to finish to my HCG paper tonight.  Well-I don’t have too but it’s a goal I have.

This morning I woke up at 6:30am on my break and on a Friday.

Why on earth I wanted to swim was beyond me. (workout in LC meters)

I was going to run later today but my joints are still stiff.  Shoot me but I want to do well at my next Half Marathon so I’m not going to die by cutting my miles in half this week.  Also-I have been hardcore working out the entire last month so my body needs a break.  I literally layed around like a bum today.  It was awesome.

I made some fried plantains and had a lot of peanut butter with them.  I’m going to have to guess this is probably about ¼ of a cup but I dug my spoon right in there.

Then I got my hair cut.  It’s pretty short for me but hopefully it will grow back quickly.  I’m not to concerned, I just got those dead ends off.

That tie dye shirt is my brothers-you know that sister I could never steal clothes from?  Well I have my brother to steal his clothes and he just gave me a bunch of sweet running shirts that don’t fit him well.  It’s nice to be the same size as your brother…well it’s nice that he wears a unisex small like he do and doesn’t get in a tizzy when I steal his things anyways.   Matt and I extremely close and that is just how we role.

After my power nap , Anna and I were supposed to go to Ruby Tuesday’s tonight but it was a terribly long wait.  So where did we go?

Nikki said a high point in her life was finding my blog?

I’m pretty bummed that no one else thinks that I am the highlight of the life. Actually, I’m really excited no one said finding my blog was the low point of their year.

I couldn’t think of any Tuesday morning songs to greet you with today so booo. I woke up this morning to about 1000 text messages. I wonder if people, especially my housemates, have realized I am in bed at 11, I’m not at the library. I turned the tv on to find the Muary Show on. Normally I watch CNN, but I just couldn’t stop watching the Maury show. How embarrassing…

Today I had a nice chocolately waffle with peanut butter topping. I added about 10 times more peanut butter after this photo, but I couldn’t get it off the spoon so it would take a decent photo.

Tuesday and Thursday mornings are spent cleaning my room and getting my life together. I cannot sleep in a dirty room and I can’t even begin to do homework-I get terribly sidetracked.

For lunch I had another quiche (asparagus) and some conscous. I had never tried coscous before, but I’m really glad I did. It’s a mixture of organic rice, melon, some seasonings and other things that I’m honestly not too sure about and I don’t think the people at the café were either. After my education class on Tuesdays and Thursdays, I work on my homework in the organic food café on campus so I always like to try something new (with my quiche of course).

After my last practice of the season today I got dinner with Tyler. She counted for me all season in my distance events. Did you know distance swimmers need counters? God knows that is a good thing, because I can’t count to 66 while swimming and racing. (and singing songs in my head).

I only do well because of her awesome countage.

I got a new wrap today called the Oregon Hills wrap. Do I have any readers from the Oregon area to contest this is mostly what you eat? Well inside were grilled veggies, rice and cheese sauce all wrapped up in a spinach wrap. It’s not as good as the baja fajita but it was still really good.


Tonight, I still need to pack for my swim meet. We are leaving at 9am tomorrow, so I’ll probably be packing at like 8:50…

Oh yes Three Tangent Tuesday. My life is one long tangent and I tend to go way around my destination and then double loop back to my destination. I’m basically a pro at tangents. (But not finding the area under a curve using a tangent vector.) UMM-I’m sorry about my inner nerd.

1. I used to want to be a zoologist. Can we talk about my love for animals? I always wanted to work with big cats but then I fell in love with math.

2. My favorite color is yellow. Call me sunshine, I don’t care.


3. I want to go teach in Washington State after college, but first I plan to get my masters possibly back in VA. I wouldn’t mind teaching in VA either so we will just see where the wind takes me.

Day 18: How do you feel about disrespecting or not being close with your parents.

Well that is really hard for me. I am extremely, 100% loyal to my parents. Honestly, there has not been one point in my life that my parents didn’t support or weren’t there for me. I love my family terribly and can’t imagine growing up anywhere else.

That being said, I understand in special cases where you may not feel close to either parents and I don’t shove my beliefs on you. If you aren’t close to your family, that is your call 100%, but I will always be extremely close with mine.

This may be the only family photo in the last decade.


Speaking of which, I can’t wait to see my brother and dad in Buffalo on Thursday. They are driving 8 hours to come see me swim. <3

BranCakes and Running

Today I realized why I joined cross country. Because when my ride forgot to pick me up after my math class at 9:50, I had to power my way to coaching class by 10. It is about a 1 mile walk (with hills). When your teacher lets you out late to begin with and you wait a few minutes for the ride that never comes, you know it’s coming to be a trek. Needless to say, cross country did me well today.

Speaking of running, I ran 7 miles at an 8:15 pace today. No incline on the dread mill and I caught up on trashy TV, double win. (And would it shock you if I told you Caitlin was at the gym getting her workout on as well?) No? Well good, we are a basically twinnies anyways.

Breakfast today was a type of pancake that I hadn’t had in quite some time. I’m thinking since the summer, but I had them almost every day and wore them out for a while.

Brancakes
1 cup bran cereal (I choose fiber one today, but have also used Kashi)
1 egg
1 tsp baking powder

Optional:

Sweetener
Protein powder

Place cereal in a plastic bag and crush until it has fine powder like consistency. (You can be lazy and put it in your magic bullet, which is what I do.) Add other ingredients and water. Then place on griddle like a normal pancake.

I also made a nice fruity yogurt topping by taking ½ cup cranberries and putting them into my magic bullet then mixing with some yogurt.

For lunch, I had another Baja fajita wrap with two red delicious apples. They gave me some corn chips too that I didn’t ask for, but who can complain. Red and purple chips. Doesn’t that remind you of the green ketchup back in the day?

Um anyways, it was nice to catch up with Kelsey.

After calculus I walked back to my room and finally got a few things on my to do list done such as emails, cleaning and all that jazz.

Swimming wasn’t bad today. We are in taper after all.

After practice, I came back and whipped up some oh so yummy fish. I bought some new fish at the grocery yesterday with the skin on it. The skin is my absolute favorite part of fish. I don’t care if it’s unhealthy, fish skin is where it’s at. (And a mass amount of broccoli)…I don’t actually even know if fish skin is unhealthy. I know chicken skin is, but haven’t a clue about fish. Nor do I really care ha.

As you can see, there are way too many things that are my favorites. I would dare to say my favorite is still my stuffed bear, Bloomie. He can always um cheer up when nothing else can. I mean how can you not like a falling apart stuffed bear with his eyes scratched up and lots of coffee stains. (And no-those stains aren’t from my youth.) On a side note-do you think I can try out for a horror film with this picture?
