Chocolate Zucchini Pancakes

Thought I would give you a wee bit of a break from savory waffles and move back into a sweet and delectable pancake.  Not sure if delectable is a good term but it seems appropriate to me.  Growing up, my mom (and she still does) made a mean zucchini bread.  I never really knew as a young child what exactly zucchini was but I knew it was a vegetable if I could eat it in my chocolate bread…well I was one healthy girl.

Actually just kidding, I didn’t really know that much about “health” as I was never a high schooler or remotely cared.  I had cupcakes for lunch half the time.

Chocolate Zucchini Pancakes

2/3 cup flour

¼ cup unsweetened cocoa powder

1 teaspoon vanilla extract

1 teaspoon baking powder

1 egg

Sweetener to taste (I used roughly ¼ cup stevia)

½ cup shreaded zucchini

¾ cup milk

Mix the dry ingredients to the wet.  Then add the shredded zucchini and cook on a griddle at 350 degrees.

It’s easy as that and you can be healthy too.

Chicken and Waffles

I thought I had posted this recipe a while ago…but alas I did not.  That’s fine though, because who doesn’t love yet another savory waffle recipe?  I like savory waffles a lot and have found you can never really have too many savory recipes.  I personally like the combination of chicken and waffles…but chicken in your waffle?  That…something about that…you probably don’t know what to say.

Plus they have the new Lay’s chicken and waffle chips…so why not pair them and make an actual chicken waffle.

Chicken and Waffles

2/3 cup flour

1 egg

1 tsp baking powder

1 tablespoon oil

¼ cup chedder cheese

½ cup milk

shredded or broken up chicken

Spices I used: garlic (I know…that’s it).

You can somewhat see the chicken pieces poking through…like a little surprise

Add dry ingredients to wet ingredients, mix, then add the cheese and chicken.  If you add them before mixing then you’ll probably have clumps in the batter.

It’s pretty big in the south but I don’t see it as much up north.

Carrot Cake Waffle

I know a few people love carrots in the blogging world…I enjoy them…in my cake.  Or in this case, in my waffle.  I created the carrot cake waffle last year as a way to get more vegetables without sautéing an entire container of kale and being bloated all night. Plus the more orange, the more tan and maybe I can look like a giant dorito by solely eating orange food.

A lot has changed since I posted a carrot cake waffle recipe (including my taste buds) so I thought I would do a bit of updating on the recipe front as well.

Ingredients:

2/3 cup flour
1 egg
1 tablespoon oil
1 tsp baking powder
¼ cup Stevia
¾ cup milk

Then add the mix ins:

1 tsp cinnamon
1 tsp vanilla extract
1 tablespoon brown sugar
¼ cup shredded carrot
¼ cup raisins

Directions: Add wet ingredients to dry ingredients.  Stir and then add the mix ins.

The more I think of carrot cake-the more I think of Spring and warm.  Which if you know me…I can never get enough of seriously. One day I’m going to figure out that way people make recipes interesting posts to blog about…I don’t have any stories related to carrot cake…do you?

Chocolate Chili Pancakes

With my latest visit to Texas, I couldn’t help but notice something really popular there…Combining the flavor of chocolate and chili pepper.  At first I was a tad nervous to give this a whirl but I quickly lightened up…because if I didn’t like it, I wouldn’t share it and I would make something else and you never would have known I tried it.  Isn’t life easy?

Chocolate Chili Pancakes

When googling around, I noticed that most “chocolate chili” breakfasts were about the same recipe and were paired with a raspberry topping.  Well I didn’t have raspberries so I decided to nix that and work with what I had on hand.

Ingredients:

2/3 cup flour

¼ cup dark cocoa powder (I used hersheys dark cocoa powder)

1/8 cup stevia

1 egg

1 teaspoon baking powder

1 teaspoon red chili flakes (I don’t why I even had those just hanging out at my house…the more you add the more spicy it will be)

1 teaspoon cinnamon

½-1 cup milk (water works too) depending on how thick you like your pancakes.  I generally use about 2/3 but don’t really measure.

Directions:

Mix dry ingredients to wet ingredients and cook on your griddle at 350.

 

My verdict?

Well obviously if I’m sharing it with you I enjoyed it.  I wasn’t sure how I’d enjoy the sweet and savory combination but let’s just say…I do.
