I don’t really know what to call these. Lemon zest. Spirit of the lemon? Lemon Squeeze…lemon cheesecake. I’m thinking lemon squeeze because how awkward does that sound.
Moving on, I like lemon a lot. Not as much as chocolate but it has always been a close second for a favorite pancake of mine. So the problem with lemon anything (think lemonade) is some people like it more tart then others. For instance, I enjoy really tart lemonade where as my brothers both enjoy really sweet lemonade with tons of added sweetener. So you must first determine…how sweet do you like your lemons? (there is some weird sexual remark in there somewhere).
Ingredients:
2/3 cup flour ( must say-wheat flour tastes weird with this..but if that is your jive).
1 tablespoon baking powder
½ cup-1 cup milk depending on consistancy
¼ cup lemon juice (Can you tell I like the tart)
Sweetner depending on your preference (I didn’t add any…but that is just me).
Mix and pour on a griddle.
A super easy recipe. I then thought, why not up the anty and add lemon yogurt on top. Talk about an ultra lemon zap. (This recipe makes either pancakes or waffles…if you are indecisive like me…)
Questions for you:
- 1. Do you like lemon?
- 2. What is your favorite lemon recipe?

I would have never thought to make lemon pancakes! They certainly sound like something to try! I think I would go towards the sweeter side though
You won’t regret it!
While chocolate always wins out in the end, lemon is pretty high up there on the continuum of awesome flavours. I’ve never used it in pancakes or waffles, I’m thinking I’ll have to try these!
Same here–chocolate will always be number one for me! I’ve never had lemon waffles or pancakes, but they sound tasty.
Lemon shortbread cookies are my favourite. Freaking amazing. The more tart the better.
Why did I never think of putting lemon in my pancakes?! I’ve been living under a rock. Holy guacamole. Done and done.
It’s funny, I used to not like lemon at all, but then I made this dessert during the holidays: raspberry crumble bars…and the recipe called for a few teaspoons of lemon juice. I loved them, and the lemon flavor came through so well and just worked. So ever since then I have been all about lemon. I love hot or cold lemon water in the morning. So long story short…these sound great.
Raspberry is a huge favorite of mine too. I’ve heard a lot of people enjoy lemon tea? Maybe if I was a tea drinker!
Such a great idea. I love lemon cho, I bet these pancakes are bomb! I feel like lemon squares are such an old person dessert..but I love them lol oh well
Lemon squeeze was my first pick, too
Can I be boring and say that lemonade is my favorite lemon ‘recipe’? Because while I do love the taste of lemon, I haven’t made nearly enough recipes that called for it. I did add a spoon of lemon juice to some bar filling a few times, though, and that was really good so I should probably do some more experimenting.
YES! Then you must post all the recipes LOL!
Whenever jimmy and I use lemon juice we take shots out of the bottle… It’s completely normal don’t worry
This just makes me want to party in Potsdam more.
I do like lemon! I really love lemon poppy seed muffins. I bet lemon pancakes are the bomb.com and would wake ya up in the morning!
They do for sure! You have made lemon poppyseed muffins haven’t you? I feel like I’ve seen it on your blog before.
Yep!!
Lemon yogurt on top is genius! I like my lemon sweet or tart, depending on my mood. Definitely call them lemon squeeze
1. Yum
2. Mom’s lemon meringue pie.
When your first pancake and waffle cookbook comes out, I would like an autographed 1st edition.
Of course! You will be the first to get one! LOL, you always crack me up!
I recently bought some lemon emulsion, which sounded amazing at the time, but now I’m at a loss for how to use it. I was imagining cookies, but now it’s sounding like pancakes. These look great and topped with greek yogurt? genius.
No lemon for me. I’m not a huge fan of lemonade, even the sweet stuff. But I don’t mind lemon drops (the candy or the shot
)
I bet these taste like poppyseed muffins, without those pesky seeds!
It could just be me, but the seeds are always getting stuck in my teeth and no one tells me LOL.
We aren’t huge lemon fans in my house, but that does sound tasty. I hadn’t thought of topping pancakes or waffles with Greek yogurt, but I bet that brings out the flavor a lot more!
It does-even plain greek yogurt does too. The tartness of yogurt really blends well with the lemon (wow I sound so foodie pro! LOL)
Lemon is a love hate for me. I simply have to be in the mood!
I loveee lemons. I would have never thought to put them in pancakes though. I must try this next time I get pancaky in the kitchen!
mm I love love love lemon flavored things
I’m not a huge fan of lemon, but I love pretty much any pancakes.
PS I started blogging again, so feel free to come check it out.
I love me some lemon. Especially lemon bars. They are so yummy!!!!!
Pancakes would be a dream!
Oo I’m such a lemon fan lol I actually drink lemon water all the time, lemon water, lemon in my tea, lemon flavored yogurt lol
Your diversity in pancake creation honestly is astounding. You rock.
When I was 8 I had a lemon birthday cake with lemon frosting. It was the best cake I’ve ever had.
you wrote lemon so many times in that first paragraph that now it doesn’t even seem like a real word anymore lol. For the record, I like Spirit of the Lemon. It makes them sound like hippie pancakes! I’m all about middle of the road tartness when it comes to lemonade but I feel like in pancakes they’d be better sweet (to me), and powdered sugar + lemon is a WIN. Nicely done once again Chef Hollie!
I’ve never thought to add lemon to pancakes. Genius… as usual.
I wonder if andrew would like these? I think he likes pancakes just as much as you!
