Coconut Pancakes

If you follow me on twitter-then you know about a month ago I bought some coconut oil.  Not only is it a miracle worker on my feet (um yeah that’s not where this blog is going) but I have created a few good recipes using it (but also easy and well…with breakfast!)

It makes sense that I start with pancakes right?  (These are extremely high in healthy fat!) 

½ cup flour

1 egg

¾ cup coconut milk (you can add more/less…this is just how I like my pancakes)

1 tablespoon coconut oil

1 tsp baking powder

Pour and put on the griddle!

*I also added ½ cup blueberries because I was feeling it

Another coconut option I was thinking was dark chocolate+coconut+flaked coconut…so many options!

1.       How do you use coconut oil?

2.       Do you like coconut?

  1. I have actually only recently started to get into coconut. I tried these mango coconut fruit snack things and actually really enjoyed them! Before then I had always thought I didn’t really like coconut but I will have to give it a second try!

  2. Ahh I used to use coconut oil in protein pancakes! SO yummy!! I also used it in baked goods in place of regular oil just to add a little hint of coconut… deeeelicious :D Of course I broke my last jar and then tried to salvage it in a tupperware, but somehow a mold spore got into said tupperware and started to grow, so I had to trash the whole thing. TWELVE BUCKS in the garbage! Wah =(

  3. I don’t really use coconut oil often, but I love coconut. I need to start using that stuff. Lately I’ve been loving the coconut peanut butter, which is basically coconut oil and peanut butter together, so I want to use it to make that! That would be awesome with these pancakes.

  4. I have both coconut oil and butter in my pantry and I just do not use them enough. I am still a bit iffy with the saturated fat content even though I know it is fabulous for you! Dang, need to work on this

    • The saturated fat is mostly Lauric Acid, a medium-chain fatty acid, meaning the body doesn’t store it, but can convert to use as energy! So nothing to worry about!
