Guest Post of My Straight Hair Real Girl Twin

Um since 1000 people did races today, please rave about your race in the comments section.  I thought of each and every single person that told me, when I was laying in my bed.  Under lots of covers and reading your blogs.  I raced downstairs to make a waffle if that makes you feel any better.

On another note-I am a bad blogging bff.  One of the blogs, that I have been reading for seriously about 5 months now-somehow never made it my blog roll!  It was like I was keeping one of my favorite blogs away from you guys, in secret!  (kind of like how I hoard pumpkin and pancake mix….) but anywho-Go check out Jaime’s blog now!  She is fabulous and loves waffles almost as much as I do.

Today I went to the gym around 10.  My legs feel awesome-seriously-and I have debated running.  BUT.  I want to still play it safe so I purposefully left my running shoes (baby Newtons) at home and brought my cross training Pegasus.  That way-I would most certainly not be running.

Then it was off to Julies house in Northern Northern NY.  You see, I go to school in Northern NY about 10 miles from Canada-so you’d think I’d be at the very top, but you can go a little East and find an even more Northern part of NY.

This was a big day for me because of two things:

1.       I straightened my hair

2.       I’m wearing pants.  I have not worn pants since Feburary 20.  I only know this because that is the day I fractured my heels on the treadmill and gave up pants forever.  I should have given up pants for lent.

Julie didn’t even recognize me.

Who is this girl?

We had some awesome noms at local restaurant.  I got my salmon of course.  I was infatuated that they gave popcorn as an appetizer and a giant salad.

Then my salmon, corn and baked potato (without ketchup-2 weeks strong!).  I’m actually really happy of how well that is going.  (I gave up lent for Ketchup).

PS: I finally made some Nanner softserve and I love it.  Always add sprinkles-obviously.

I just used bananas and Greek yogurt.

Incase you don’t know your Northern New York geography, there are a lot of hills.  As in we are in the Adirondacks and you vary in elevation every five seconds.

Diary of a Pancake Addict

Since I love making lists (nerd much?) I created a list of all the pancakes/waffle recipes I’ll try and create.  For some consistency (us math majors like that…why do you think we use x, when there are 25 other letters of the alphabet?) I’ll use call it The Pancake List (but you can infer that waffles are always a go).

1.       Cookies and Cream

2.       Apple Pie

3.       Oreo Waffle

4.       Cranberry Orange Waffle

As always feel free to add more obviously.  I’m adding that triple major in pancake making soon.

Since I have been terribly busy lately and my posts have reflected that I still eat, here are a few of my noms from the last couple days:

I wish someone didn't give me the idea to put sprinkles in my pancakes like it was my job. This lemon pancake was 6 inches big.

I have a strange addiciton to mushrooms. I cooked and ate an entire container with my "side" of tilipia.

I wasn’t planning on running today, however, all of the Arctrainers were being taken up at the gym.  I think people knew that I wanted to use them and they decided it was acceptable to cock block them. Anywho-I did 3.5 miles on the treadmill in 27 minutes so I can’t complain at that pace.  Then I did another 30 minutes on the Arctrainer planning and chatting with Justin about our fabulous plans in store for the evening.  Never be my workout buddy-you think I’m chatty now…

I ran yesterday 7 miles, at roughly a 7:15 pace and felt fabulous so I wanted to allow some rest time before my first official long run.  I am taking my running at how I feel-right now more solo so I don’t feel pressured to keep up and can do the distance and speed that my body allows.  I think my heels are officially healed (if ya didn’t catch I tweeted about that 1000 times…why do people follow me?).

For lunch, I met with Bonna (another cross country BFF)!  Can we talk about the most busy woman known to the world.? Seriously-she is taking 25 credits.  Um-I’m taking 18, and I thought I was an overachiever.

 

I got a carrot quiche (which was the bomb.com).  I had neverhad the carrot quiche before and it was delicious.  (I have yet to find one quiche that isn’t).-along with a wheat berry salad and fruit salad.

 

Justin and I made blueberry waffles for dinner.   He had never been over for a Hollie pancake or waffle before, so it was a must.  Like I was telling him, it is socially acceptable to have breakfast for dinner when you have company.  He bought a plethora of blueberries so we made blueberry waffles (with unpictured sprinkles), topped with homemade blueberry jam and more blueberries.  Oh hey antioxidants.

Too bad I can't pick favorites for my favorite breakfasts...

Holla at Justin because instead of his normal two and half hours on the Arctainer (all at once, with NO trashy tv..) He will be running a personal marathon (solo-style) this weekend.  I told him if he were to finish at my house, I would make him a ribbon to run through.  I’m not even joking.

Incase you wondered, although I’m in the most Northern part of NY, there is a little bit more North and that is where I will be this weekend.  Me and my girl Julie need some girl bonding doing what we do.  Ya know (if you don’t-it involves going shopping, eating good eats, and going to the casino).  We really live the dream.

On a side note-I’m going to be trying a new way of commenting back to you guys through email.  I mean obviously I won’t comment unless I have insightful words of wisdom to write back, but it makes a lot more sense to do via email since you would actually know I’m commenting back.  (in my mind at least)

I love step aerobics obviously, but I enjoy working out by myself or with one other person.  When I’m doing tempo runs, I can’t run it with other people chatting away.  With swim team, I had serious ADD that I would want to talk to everyone.  I swear that is why no one ever swam in my lane…

The Carrot Cake Waffle

Last night was my monthly blogging break. Actually I have a ton of tests and projects due form today on up to Tuesday, so with the exception of America’s Next Top Model there weren’t too many shenanigans from my end of the table. To give you an idea-I have a test today, quiz tomorrow, 2 tests on Monday and 1 on Wednesday. Then (for my NY state lovelys), I as a college kid have to take 5 regents (for homework) back to back to help me prepare to be a NY state teacher. Holla to you guys because I have 2 done and I’m bored.

This morning I woke up and had my daily JUG of coffee, and then realized I was out of coffee filters to make another batch. (My morning jug is on autotimer so it makes it as I’m waking up).
Since it would be hard for me to explain my exact though process, I clearly found it acceptable to take 1000 webcam photos (like a childrens picture book). Keep in mind this is all at 7:30 am…why I have this much energy is always beyond me.

My coffee is gone and I have to be too the highschool soon!

No coffee=Ms. grumpykins=bad review=no student teaching placement=no graduation=no job=living on the street=no harrassing young students to love math like I do. AH!

But wait...I have an idea!

I'll go to the oncampus Union and get coffee and be able to spread my math love to others.

Mission Accomplished.

Anywho-today’s post is actually dedicated to Holly at Greek Yogurt and Apple Slices. But not because she is the blog that I have been subscribed to longest (shout out!) but because she convinced me that carrot cake pancakes would be awesome in my belly.

I was feeling lazy and waffle like though-so introduce the Carrot Cake Waffle

Start with the basics:
1/ 2 cup flour
1 egg
1 tsp baking powder
1 scoop protein powder for me

Then add the mix ins:
1 tsp cinnamon
1 tsp nutmeg
2 tsp vanilla extract
1 tablespoon brown sugar
¼ cup shredded carrot
¼ cup rasins

Mix and add water/milk to get the right consistency. Waffles need more than pancakes. Then serve with Greek yogurt and sprinkles on top and we can be twinnies.


Don’t expect many new pancake recipes soon-because I’ll be making this all the time until I wear it out. It I that good, I really think the brown sugar is what gives it the real carroty cake taste. No really-I’ll be making lots more, you and I both know that.

On a separate note-someone asked how I create so many different pancake and waffle recipes. I don’t create them all from scratch bur rather enhance old recipes. I have a base recipe that works for me and normally add in different mix ins depending on the flavor I want. I have a huge sweet tooth so I get inspired by many different cakes and cookie recipes. I’m always up for new ideas though because my feeble mind can only handle so much with math. ;)

Quiznos and Seafood. For.The.Love.

Today just started off as an awesome day.  I am not going to lie to you guys but nothing today really went wrong in my life and besides wordpress being down for a few hours (which I survived and I got actually math work done, it was an above stellar day(and how I could lie to my blogging BFFs?).

The other day, when I asked for nomtastic (lol cats say it-why can’t I?) ideas for pancakes and waffles, Amy threw at me chocolate strawberry.  Heaven in my mouth waffle right there. Now go check out her blog. mkay.

Am I the only one who notices that when you order strawberry pancakes in a restaurant they normally just give you a plain pancake with strawberries on top?  Or even worse-it’s strawberry jam? Well I added some inside and outside the waffle and it made it them even better.  So I suggest you try it.

After education class today, which we learned more about observing the classrooms on Thursday, Julie and I went to Dexter’s.  It was a quick eating sesh because we had other pressing matters but I had my favorite asparagus quiche and to convince you to try new things (after my tofu episode) I had a wheat berry bulgur side salad.  What a mouthful-but it had wheat bulgur, a fruity vinaigrette dressing with cranberries and carrot and spinach.  It was seriously delicious and I will be getting it again.

My run today was done outside which feels so nice seriously.  The wind, however, was something else but I’m actually just thankful to be running again.  I held between a 7:30-7:45 pace which was good for me even though my calves are still so sore.

Then it was Quiznos time.  They had a new seafood salad don’t ya know?  I clearly needed to try it-the best of both worlds-Quiznos and seafood.  Holy Nom.  I am in love with the seafood salad and I recommend it to all of you.

No seriously-if they ever get rid of this, I will cry.

Triple Tangent Tuesday is actually something I have not participated in, for quite some time so here ya go.

1.       I have over tagged 1500 photos on facebook.  Is that a touch to much?  Maybe, but I like each and every one of them.  I don’t really bother untagging myself because I feel if someone thinks I look absolutely disgusting they can find another one where I look decent and.  Not one of these photos has something that I wouldn’t show my grandma either.  So there.

2.       I have written 5 cheques in my life.  This was the first one that I wrote my parents.  Last year.

3.       I have an addiction to mountain dew and they have new flavours.  So judge me all you want because I’m going to drink it (and I don’t think you can ever convince me otherwise).  All.The.Time.   I was going to give that up for lent but I chose ketchup and it is becoming extremely hard but that is another story.

Not How I Welcome Spring…

I wish I could love each comment that you guys leave me, or like them I guess like facebook.   Wouldn’t that be so much fun?  It would give me more time to spend in the blog world…liking comments…Liking other peoples comments.  I may never get out of the blogging world that way.

Did anyone do any Spring Cleaning yesterday?  Because Julie cleaned our entire house.  Actually I helped a little bit by throwing out our microwave away.  I don’t know if I ever mentioned-but it was defective and had an electrical fire.  Nothing sparked but it was making humming and scary noises and flashing.  Um-I haven’t been that scared in a while.

I feel it would be innappropriate to take a picture of my housemate cleaning so I chose a photo from a few months ago (when we were tan..when I was tan she still is).  :)

For breakfast this morning, I was inspired to make sweet potato pancakes topped with peanut butter.   Sweet potatoes just have something in my mind that normal taters will never have.  Who knows exactly what that is-maybe their abilities to be subdo my sweet tooth.  Either way they are the bomb.com.

After going to my math class this morning, I met up with Caitlin and we had a little arctrainer gossip seshy seshy.  I normally have class at 10am, but after getting to the gym, my coaching class was canceled. I am beginning to wonder if I might ever have the class more than once a week…

Lunch today was a sundried tomato quiche and Greek yogurt (unpictured).  It was still amazing.

Confessions:  I tried teriyaki tofu.

I did not like it.

At all.

I never want to be reminded of this experience again.  Seriously.

Today, class schedules for next semester came out.  Best Day ever for the organized soul.  Seriously does it make me weird, I’m an ultraplanner?  Next semester (fall)  will be during  both cross country and swim season-so my schedule so I have to take less credits to handle that (easier=less credits).

Right now, I’ll have two courses on MWF (mathday fundays 3X per week?) Either 9-11 or 10-12…I haven’t quite decided yet.

Then Tuesday and Thursday I’ll be observing in the classroom in the morning and then taking current topics in nutrition in the afternoon for my minor.  Current topics in nutrition-really the titles says it all  and we will be discussing a range of topics from veganism to the American Diet.

Because I’m senile and forget if I mentioned this but this summer I’m taking two online courses for my health minor.  Drug studies and current topics in the American Diet.  (aka why Americans are becoming more and more overweight.).  Neither will be too challenging and I love learning, so it will be enjoyable.

I really feel like I’m going to take adult classes after college and grad school but I guess wanting to be a teacher-you never really stop learning.  Students teach you just as much as you teach them!
