The Carrot Cake Waffle

Last night was my monthly blogging break. Actually I have a ton of tests and projects due form today on up to Tuesday, so with the exception of America’s Next Top Model there weren’t too many shenanigans from my end of the table. To give you an idea-I have a test today, quiz tomorrow, 2 tests on Monday and 1 on Wednesday. Then (for my NY state lovelys), I as a college kid have to take 5 regents (for homework) back to back to help me prepare to be a NY state teacher. Holla to you guys because I have 2 done and I’m bored.

This morning I woke up and had my daily JUG of coffee, and then realized I was out of coffee filters to make another batch. (My morning jug is on autotimer so it makes it as I’m waking up).
Since it would be hard for me to explain my exact though process, I clearly found it acceptable to take 1000 webcam photos (like a childrens picture book). Keep in mind this is all at 7:30 am…why I have this much energy is always beyond me.

My coffee is gone and I have to be too the highschool soon!

No coffee=Ms. grumpykins=bad review=no student teaching placement=no graduation=no job=living on the street=no harrassing young students to love math like I do. AH!

But wait...I have an idea!

I'll go to the oncampus Union and get coffee and be able to spread my math love to others.

Mission Accomplished.

Anywho-today’s post is actually dedicated to Holly at Greek Yogurt and Apple Slices. But not because she is the blog that I have been subscribed to longest (shout out!) but because she convinced me that carrot cake pancakes would be awesome in my belly.

I was feeling lazy and waffle like though-so introduce the Carrot Cake Waffle

Start with the basics:
1/ 2 cup flour
1 egg
1 tsp baking powder
1 scoop protein powder for me

Then add the mix ins:
1 tsp cinnamon
1 tsp nutmeg
2 tsp vanilla extract
1 tablespoon brown sugar
¼ cup shredded carrot
¼ cup rasins

Mix and add water/milk to get the right consistency. Waffles need more than pancakes. Then serve with Greek yogurt and sprinkles on top and we can be twinnies.


Don’t expect many new pancake recipes soon-because I’ll be making this all the time until I wear it out. It I that good, I really think the brown sugar is what gives it the real carroty cake taste. No really-I’ll be making lots more, you and I both know that.

On a separate note-someone asked how I create so many different pancake and waffle recipes. I don’t create them all from scratch bur rather enhance old recipes. I have a base recipe that works for me and normally add in different mix ins depending on the flavor I want. I have a huge sweet tooth so I get inspired by many different cakes and cookie recipes. I’m always up for new ideas though because my feeble mind can only handle so much with math. ;)

  1. I love your thinking “no coffee —- eventually leads to no job” — that is how I think too! The smallest issues turn into worst case scenarios immediately.

    I don’t drink a ton of coffee anymore, but when I did, I was in coffee situations all the time — no filters, out of coffee, out of creamer, mugs/dishes all dirty or in the dishwasher, etc. It was always a crisis!

  2. I don’t drink coffee so no I’ve neevr had a coffee crisis. ;) Love your photoshoot with yourself! Haha. I will have to try to make a carrot cake waffle but I’ll probably just add the stuff to my normal mix. Carrot cake is my favorite cake…. =)

    Not sure if you’ve ever done a red velvet pancake/waffle? I think I’m kind of obsessed with red velvet right now…I want to make red velvet brownies, red velvet cake, and red velvet cupcakes once our new oven is delivered and installed.

  4. I live for coffee – I cannot function without it. Starbucks and I are best friends :) however… when I’m running late for work I get Seattle’s Best (aka Seattle’s Worst) in my company’s Outtakes cafe. Its better than going without!!

    Um those waffles look delish. I must buy a waffle maker ASAP!

  5. Your pictures made me laugh! I’ve been on the coffee hunt for DAYS now. I’ve been trying to get my coffee at the dining hall (fo’ free) but the damn machine has been broken. Well, it’s Thursday (work 8 – 3:30; class 4:30 – 10) so I broke down and went to Starbucks. Best $2.50 I’ve spent in a while :)

    I’ve almost had coffee crises where I’ve had to choose between coffee or being late to class. Most of the time, I choose to make & bring my coffee and end up being late to class. Whatever professor – at least now, I’ll stay awake in class.

I teach phys ed and health to middle school kids so I admire you working hard to become a math teacher. Looking forward to more posts!

Totally excited to try it out!! :) hahaha I love all your crazy pics though, I get the feeling that you would be crazzzy fun at 6 AM pulling an all nighter…omg I love it!:) I’m definitely super hyper in the morning too (so long as I have my java!) I actually just typed this comment 3 DIFFERENT times! because my stupid lil bro keeps messing with the internet connection! hah so hopefully it’s extra good now:)

  11. Hmm, I don’t know if you like cranberry orange muffins, but they are one of my favorites. That would make an awesome waffle!
    No coffee = Dead Tara. I’m trying to wean myself off my addiction, but the effect of this is falling asleep in Spanish. Not good.

  13. I”VE made thooooooose!! I love carrots for breakfast so much!! People usually don’t think of them as sweet but they totally can be : )
    I don’t usually drink coffee, so I don’t usually have a situation, haha, thank goodness

  15. What do you put in your coffee? I usually add straight coffee to my protein shakes in the morning, but I never just drink coffee.

    Kind of like what you said with your pancakes recipes, I’m like that with many of my meals… am I really cooking or “assembling” lol. It’s like I cook chicken, then assemble it over other things like wraps or english muffin pizzas!

    So were you able to get a lot of work done tonight? I’m expecting some WILD stories from this weekend!

  16. That looks INCREDIBLE. Everything is better with sprinkles, that’s my life philosophy.. ;) You make me feel better about my coffee addiction! I need about three jugs a day….. bahah. I usually don’t run out because I’m obsessed and buy too much of it all the time!
