Pi and Coconut Waffles

I have so much to comment about yesterday and yesterday’s blog.

Speaking of yesterday and day light savings time, my body was not ready for one or more of the following things:
1. The cold weather of Northern New York
2. Actual college work
3. The ripple effect of daylight savings time? Does anyone else think that you feel more effects the day after?

And yes, each of you can come down to VA and to the beach for a blogger meet up and we can have an America’s Next Top Model party. I would love it..I would invite you all to upstate NY right now but it’s cold and I don’t want you to hate me too much.

Speaking of ANTM, someone found my blog yesterday by typing in Reina’s eyebrows. Whoever you are, we are already BFFS.

Anywho now that I’m back at school I could finally use my giant waffle maker and coconut.
I do not recall which blog I read last week that reminded me to have a dark chocolate coconut waffle so if it was yours please let me know. With that being said-I was super excited to try it out. It was unnecessary to buy a huge thing of coconut for the week I was going to be home.


I just added ¼ cup of shredded coconut to my basic recipe!
½ cup flour
1 egg
1 tsp baking powder
¼ cup dark cocoa powder
¼ cup shredded coconut
You could probably use coconut milk as well-but that will be my next adventure. I always look chocolate waffle pictures…don’t they just make you want to eat them up? HA.
Both math courses were hard to pay attention and seemed to take forever. That is what happens the week after a break I suppose. Especially since it’s pi day today, did you forget?
After class, I could finally have a quiche from Dexter’s and I chose Asparagus! They also had crab but I wasn’t ready for crab in my quiche. I got a quinoa and lima bean side salad. Can you say nom? Seriously-I’m becoming obsessed.



Since it was such a lovely day today, I ran outdoors. I’m supposed to run outside as much as possible versus the treadmill and since I had to do my laundry as well-I chose my laundry running route.

Fact: I don't own any neutral coloured running clothes.

Incase you wondered, the washers at my school take exactly minutes to cycle through 1 loud. This route takes me anywhere between 36-40 minutes to run and starts from the laundry room. It kind of kills two birds with one stone ha.
The run went pretty well but I could feel the quiche in the pit of my stomach. So needless to say it was difficult-but my heels felt good and for me that’s all that matters right now.

You know-you aren’t allowed to tell me you didn’t have anything for breakfast.

  1. Haha I LOVE your outfit! That’s amazing.

    If I don’t run at my house, I run from the gym in the neighborhood behind it. I pretty much know all the streets and how many miles everything is by now. :) except I still haven’t found Hidden Park which really is hidden. Been there twice in the car but I can’t seem to find it when I run.

    For breakfast I had a spinach banana berry smoothie and for lunch I had blueberry waffles made w/protein powder! I’m not a big chocolate person.

  2. I need to dust off my waffle maker. I haven’t had them in ages and I’m considering having one for breakfast tomorrow, but it will probably be frozen. I had the BEST breakfast this morning! I made a breakfast cookie and topped it with banana soft serve. It was epic. Now I’m celebrating pi day by making pumpkin pie!

    So I want to own your running wardrobe. I have some sassy pink leopard spandex, but I have to wait til summer to break those out.

  3. That dark waffles looks so good! And those quiches — do you ever try to make those yourself? I haven’t had much luck with quiches which is too bad because I love them.

    My running routes all start at my house — there is a state trail about 1/2 mile away from us and it is a great route. There are also a few parks nearby that have trails around ponds or lakes.

    Breakfast — smoothie (almond milk, ice, banana, whey protein powder, scoop of PB, chia seeds!

    I had a hardboiled egg at 7am, then oatmeal, pb, protein powder, and banana at 10. (thats my breakfast schedule at work haha)
    Love the running outfit- I could NEVER pull that off!

  5. You are absolutely correct, you feel the effects of losing the hour the next day. I felt so spaced out and discombobulated this morning, I had to take a half day from work!

  6. Wow, you’re never getting hit by a car in that outfit… Love it!
    For the waffle recipe- “1/4 cup of coconut”… you mean like coconut shreds or what? I need to get a damn waffle maker. For breakfast I had one of my famous “oatmeal bricks” flavored with vanilla protein powder. I added maple extact into the mix this time though… wow! Try stirring maple syrup right into your waffles next time!

  7. I love your running outfit! Anything brightly colored is my favorite! I ate a blueberry bagel for breakfast! :) And a plum, and I still have a peach. Yum. :)

  8. That waffle looks sinfully delicious. I always can count on you to make me drool over your pancakes and waffles. I will have to send you some Canadian maple syrup sometime so you can make them absolute perfection. ;)

    I had coffee, a banana, a 9 bar, and a pork and sweet potato scramble for breakfast. What? I love to eat a lot in the mornings. :)

  9. That waffle looks amazing! Some else asked too but what do you mean by ‘coconut’? The quinoa salad also looks drool worthy and I love me some asparagus quiche! Yesterday for breakfast I had a bowl of 3 different kind of cereal with strawberries mixed in. I think I’m about to have that again since the sun is taking forever to come up! My running route starts at my apartment complex and I am much to much of a scared-y cat to run in the dark…

  10. That waffle looks yum!!! I would put PB on it probably.. that is my favorite combo: dark chocolate and PB to.die.for.

    Good to hear your heel is getting better! And the brighter the clothes the better – being hit by a car is no fun! I choose to wear pink on almost every run :)

  11. Loving the coconut + dark chocolate on your waffle. I’ve been enjoying the same combo on my oatmeal lately. I wish I had a waffle maker though, but I will try making these as pancakes instead. However, it’s not as fun as waffles because I love the crisps that comes with waffles.

    Neon colored running clothes. Now, that’s what I’m talking about. I wear bright clothes too. I have a bright fuchsia Nike shoes I’m currently rocking. Colors are fun

  13. Um, seriously dark chocolate waffles? You are killing me cause now I’m hungry. I start & end my runs at my room, which works out because I get a short & fast downhill at the end.
