So How About Some Substinace Sunday Action?

I’m glad you guys have been so cool and understanding about my waffle usage versus pancakes. You know-gotta change out those carbs sometimes.
To get maximized fruit intake (even though it only ended up being one serving) today I had a blueberry with cranberry topping waffle. Oh YEAH! In case I forgot to share my typical waffle recipe, here ya go.

Typical Waffle:

½ cup flour
1 scoop protein powder
1 egg (works better then egg sub)
1 tsp baking powder
½ cup blueberries
¾ cup water

Then I took ½ cup cranberries, 1 Truvia packet and ¼ cup water and put into my magic bullet. I didn’t know how it would come out but it was magical.

Then I went to some classes and finally, what I have been waiting for. Running outside! W00t w00t. I got seven miles in about an hour. (Which is an 8:30 pace). There was some sliding around and waiting at some traffic lights but it was glorious. 15 degrees is the coldest I have ever run in but it wasn’t even bad.

Fun fact of the day: My legs are hella sore! But on a side note-I have been wearing compression socks for the last 24 hours. Minus the two hours I was in the pool. Because swimmers don’t approve of runners so I have to hide my other identity.

So that’ basically my life today. I’m working on some advanced Calculus homework and shooting to watch strangest addiction tonight on TLC? Not really anything to write the blogging community via food wise. Tomorrow I’m grilling some steak and trying butternut squash. I have never tried it!

Some steak, asparagus and watermelon. Typical campus diet....ya know.

Oh yes fruit and veggie count of the day.
Fruits-1. Veggies:3. So weekly I’m at 16.5. On a roll!

I’m glad about half of you guys chose to still here me ramble away about myself. I mean you love hearing me talk about myself and I love talking about myself. I’m just a conceited-you know-what. If only you knew the real me…But instead of factual Fridays talking about my nutrition class, I shall have substinance Sunday. (And yes, I did use the synonym creator on Microsoft word to find a synonym for nutrition.

So Substinace Sunday versus some aspect but we have learned in nutrition sound good to you?

Day 8-A picture of you acting crazy. How about just a picture of me because I think I’m normally pretty crazy (or so I’ve been told…). Never the less-I chose this one, at prom. Because I took more photos like this then I did smiling, and needless to say I did not make mommy proud.

Peanut Flour Waffle and More Schooling

I must be going loco or something but I found that 20 degrees was indeed merit enough to run outside. Then I realized, um Hollie, you haven’t run in a month and half no wonder your calves are screaming don’t get out of bed.

As hard as this is for me to admit, I often jump into things. I have to remember, yes I was running 50-60 miles weekly but that was a few months ago. My body will love me if I slowly get back into running (and I’ll be injury free, which posted somewhere that was my coach’s goal all along)

So anywho-I’m going to ACTUALLY stick with the plan of running 20 miles this week. Next week I’ll run 30. The following week, I’ll compete at my swimming championships and never be pool grimy (until July) again and run 10 again.

So yell at me because I’m going to get in my 20 miles and then call it a week.

Today was a pancake to waffle conversion recipe. As many of you know (or don’t) you can’t put pumpkin into a waffle maker and expect a nice hard crunchy waffle. (That’s what she said?). You can’t put a smashed banana, Greek yogurt or actually many other of my pancake staples into a waffle maker. I am the first to admit, I use a lot more mixes to make waffles then pancakes.

But today I adapted my peanut flour pancake recipe to make chocolate peanut flour waffle! It is much denser then a typical waffle but I think you will enjoy the high protein (32 grams!) and high fiber (16 grams!) waffle.

½ cup peanut flour
1 egg (egg sub/whites does NOT work as well)
1 tsp baking powder
4 tablespoons cocoa powder
Between ¾ and 1 cup of liquid (milk or water, I choose milk)
Sweetener to taste

Wala. As you can see, this waffle uses the same amount of batter (if not more than normal waffles) but does not fill out the waffle maker because it’s so thick. So if you like dense breakfast foods for about 300 calories, this baby is for you.

Because waffles need greek yogurt topping

 

Lunch today was at our nicest eatery on campus, Dexter’s. One of my cross country friends, Bonna, (who I mentioned got plantar fasciitis and had to stop midseason) and I grabbed a bite to eat and caught up. I’m happy to report her foot is doing better and she is planning to run an ultra marathon in November! You go girl.

For lunch I had my normal turkey, mozzarella and assorted veggies in a pita pocket plus a fruit salad. One day I will be creative, but not today.

My first class of the day, teaching middle school, was interesting. It is exactly what I want to do…aka teach middle school math so obviously I’m going to be more interested in that. We also have to go to an actual middle school starting in early March…

My nutrition class was pretty interesting as well. I’m certainly going to learn a lot an I’ll be posting things about it on the blog (if you are interested)…I’m thinking about changing factual Friday to different facts that I’ve accumulated throughout the class. What do you think?

That also leads me to the next point. For the next couple of weeks, I will be posting (I promise) but I’m going to settle into my semester and decide what works best for me and how much extra time I have. I’m taking a 16 credit semester and obviously want to succeed in that. 16 credits but 6 classes since teaching classes are strange and unproportioned credit hours. Although, as we know I’m striving for a blogging career ha. A career of sarcastic writing seems rather suitable for me.

Day 7: This was the day I quit last month but here ya go. A picture of you working. Want to know a fun fact about my job? I’m the supervising lifeguard in a rough part of my area. We can’t open without a policeman. We were on the local news when we actual opened this summer. It pays well though and it was a never a dull moment…to say the least.

Pumpkin Breakfast Pudding

So yes I indeed stole this from carrots and cake and adapted it within 12 hours and made it.   Two of my favorite things in the world combined into one (and no it’s not pancakes).

Sweet Potato Pumpkin Breakfast Pudding

Makes 1 serving

Ingredients:

  • 1 cup sweet potato pumpkin
  • 1 piece of whole wheat bread, torn into pieces
  • 1 egg
  • 2 tbsp soy milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon and pumpkin pie spice
  • 1 scoop of protein powder (Yes, I went there)

Directions:

  1. Preheat oven to 350*F.
  2. Combine all ingredients in a large mixing bowl and blend until smooth.
  3. Coat an oven-safe dish with non-stick cooking spray and pour in mixture.
  4. Bake for approximately 20 minutes.

 

Nom nom nom.  I had this as more of a pumpkin pudding dessert last night.  I topped with a little bit of Greek yogurt and peanut butter and was certainly not disappointed. I think you could go in different directions with this and am going to be trying some more combinations in the near future.

 

Breaking Out the Pink Spandex

Today was the first day of classes and also the first day I can run again!  What a fabulous day…finally something to do with my life.

But it started out awful.  My waffle mix was too watery and the heat two high on my waffle maker.  So therefore, my waffle got stuck.  I spent five minutes (along with burning my fingertips) of poking and prodding trying to free the strawberry and blueberry waffle from the maker.

It resulted in this.

 

 

It was still tasty and I got my fruits in.  Just not beautiful.  I committed a blogger sin.  Posting ugly food.  I hope you still enjoy my entry.

Did I mention my goal for New Years was to get 25 servings of fruits and veggies weekly?  I know it’s not the 5 per day or whatnot but 25 is a big step up for me.  It’s about 4 per day or so.  Right now I’m at 9 between today and yesterday.  Someone help me.

Today’s class schedule was as followed.

9:00am Advanced Modern Algebra

10: Principles of Coaching

11:00 How to sneak away to the treadmill (No not a class but exactly what I did.)  I just kind of told my housemates that I had class from 9-12.

2:00 Advanced Calculus

Do you ever notice that upper level math classes just throw the word advanced into it to make you feel good?  Advanced calculus is the class after Calc 3 and differential equations.  They could have just called it Calculus 4 but they want me to feel good and have bragging rights that I’m “advanced”.

I supposed I’ll explain to you how my day got better.

It was -5 here today as the high. Since my nine and ten classes were literally 20 minutes walking distance from each other, as much as it pained me I knew I had to drive to class today.

I go try and start my car.

It doesn’t.

Must have been that -30 cold blast we got hit with last night.  At least my housemate Kelley was more than willing to drive to class today and then drive me to my next class.

Modern Algebra was fun or as fun as another proof intensive class can be.  I haven’t had this professor though and she is crazy so it will be enjoyable.

My coaching class is actually in our athletic building and is a ton of fun.  Two people that I quite enjoy talking to Brittany (kick booty 500er) and Cory (didn’t swim this year for personal reasons) are in there.

Then it was time.

Since I’m already in the gym complex and really need a pick-me-up because of how swimming has shaped up to be, I got my run on!  I haven’t run in nearly a month so I was hella excited to start again.  I got in 6 miles in 50 minutes which is a nice start.  You can’t really complain about the beginning of anything.

I had lunch with my housemate Kelley and my new housemate (Kelley’s sister) Jen.  It is weird not eating with Aram all the time but I don’t really mind and gives me time to get all my girlfriend bonding on.

Anywho for lunch I had a rye Panini with roast beef, mozzarella, spinach, tomatoes, banana peppers and crushed red peppers.  I also had a big bowl of corn.  I was just craving some corn, it was so random.  Corn is one of favorite veggies I think.

After my 2:00 Advanced Calculus class which is the same people as last semester and the same professor…in the same classroom (obviously the best time of my life), I came back and got ready for swim practice.

We haven’t had a hard swim practice is nearly a week due to the double dose of swim meets last weekend.  It wasn’t as bad as I thought I but having a hard set of 400IM’s isn’t my favorite thing either.

Because it was so cold today, it was certainly a soup night.  I heated up southwestern style Progresso and got another serving of veggies.  With a piece of Tilapia, it was the perfect meal.

On a side note-sorry I haven’t produced any good recipes lately.  I have been rather lazy to try new things but also busy that I don’t have the time.  I promise I’ll have a good one out tomorrow.  Dealing with pumpkin (and it’s not even pancakes…)

Day 7 A picture of you dressed as someone famous.  I honestly have never really dressed as someone famous but sometimes when I’m behind the blocks people tell me I resemble Natalie Coughlin (a famous swimmer-look her up!)  So we both wear bathing suits so wala.

Mine was Calculus.  Don’t judge me.  Although backpacking was at the top along with human sexuality.  Freshman general education requirement are always a bundle of joy.

Dresses Dresses Everywhere!

Wow, thank you guys for your support of my paintings. I was kind of afraid to put them up because after my stick drawing from two days ago you may wonder. I like to paint animals personally, some cutesy and some fierce. My cat means the world to me which is why I started off with her.

Now I’m on too fish.


This is what I painted all night last night. Yes, I did paint a fish on Saturday night and do you know what else? I stayed up later then when I go out. I’m not quite done yet, but it was so relaxing for me to just sit there and paint (considering it was a rather eventful night ha).

Since I have been in a waffle craze lately, I decided to make some pancakes instead. It took me a few seconds to decide which kind I wanted to make but then Julie came to my rescue with pink pancake mix bought at Wal-Mart. It’s a special for Valentine’s Day I would assume. So in short they were delicious and tasted like normal chocolate chip pancakes. So go buy them and be festive.

Topped with Chobani greek yogurt and syrup. YES!

I had gotten myself all excited to go and run some miles on the treadmill today and do you know what happened? They were closed. Closed. It’s the first day back for most of the students and the gym is closed? They start their normal semester hours tomorrow. For those who wondered, it felt like -20 today outside and this girl was not feeling a run in that.


In short, my school obviously supports being healthy.

The casino today was quite depressing. I lost the 20 dollars that I brought to use. I gave myself a limit of 20 because I’m not going to the be that girl who just keeps spending. Think of all the pancake mix that I could buy with that. Oh well-it was still a humorous time. Julie and I went to the mall afterwards and I got some nice walking around campus shoes. When I’m not wearing uggs or my baby newtons I don’t really have a pair of shoes I can walk around in and these were perfect. I also got another new cookbook titled “The Student’s Cookbook.”

For dinner I made an egg, chicken, spinach, tomatoes and mushrooms scramble. Incase you wondered, I sauteed the spinach added the tomatoes and mushrooms. After they were all cooked I added one egg and 1/2 cup egg whites and wa laa.

Topped with some red pepper and hot sauce. NOM NOM NOM

Well I’m laying in bed relaxing and watching mean girls 2 tonight.
