Chocolate Zucchini Bread

This is a favorite at my house and served with vanilla yogurt or ice-cream. I’m in heaven. It is by far one of my favorite cakes/breads so being myself, I shove my love of things on other people. Therefore for Arams graduation I made him chocolate zucchini bread. No you cannot taste the zucchini, it really enhances the flavor and make it moist. I would have used partial peanut flour, however, one of my housemates is allergic to peanuts.
Chocolate Zucchini Bread

Preheat the oven to 325. Grease and dust a large 13″x9″ pan.
Beat wet ingredients together until smooth.

Wet Ingredients:
1/2 c plain natural yogurt
1/2 c milk
2 large eggs
2-4 tsp vanilla
1/2 c packed brown sugar

Sift into a large bowl:
Dry Ingredients:
2 c light whole wheat flour
½ c cocoa
½ cup sugar
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
Mix dry ingredients until well combined. Make a well in the dry ingredients, then pour in wet mixture and mix.

Then fold in 2 cups grated zucchini followed by 1 cup of chocolate chips.

Bake for about 50 minutes, rotating pan half way through baking. Test for doneness after 30 minutes. It will be done when the toothpick comes out clean.

And this is why I will never be a profesional cake decorator.
