Breakfast for Dinner?

My week started oh so well, when I tripped and fell down the stairs spilling my pancakes and breaking my favorite plate. The mellow yellow favorite plate.

But sadly I didn’t have to wake up for practice this morning. So I woke up at 9 and made peanut flour pancakes. Then topped with chocolate pb2 and Fage yogurt.
I learned, yesterday while watching The Great Baker, the worst thing someone can say after eating something peanut buttery is “man I need some milk.” So that’s why I topped with Fage, so I didn’t need any milk hehe.

I went to the gym for an easy 6.5 mile run and some more core exercises. My core is becoming a bit weak lately (and thus my butterfly kicks are suffering boo). I could also catch up on Say Yes to The Dress from 11-11:30, which is my favorite show to run too. Although most things on TLC have got my heart.

For lunch, I went and had a Hollywood Hill wrap at the union. The wrap was a basil based wrap, with rice, chicken and chedder cheese. Also included was mayonnaise but I asked for none of that. Mayonaise and Hollie just do not and will not ever get along.

Plus salad number nine. This was a salad inspired by Chick-fil-a’s fruit salad. I had spinach, grape tomatoes, pineapple, maderin oranges with carrot shreads and a bit of feta cheese.

Then I went to swim practice. It isn’t hard this week like I said earlier since a lot of people can’t make it due to exams and exams schedules.

I got done with practice in about an hour and forty five minutes. It was nice to just relax and stare at nothing versus studying for a while.

 

Then for dinner Aram and I made biscuits and gravy. I stole the recipe off of the carbquick box for the gravy mix and used a standard packaged mix for the corn muffins.
(hehe and you thought I was going to have pancakes for dinner didn’t you?)

These are my kind of recipes so easy.
1 cup sour cream
1 cup water
¼ cup carbquick

This is what I used:
1 ¾ cup Greek yogurt
1 cup water
1/3 cup Carbquick
1 tsp garlic salt
1 tsp onion powder
1 cup ground sausage

Add everything and boil for about 3-4 minutes. Just enough to warm it up.

If I had thought about it earlier-I might have added sautéed mushrooms into the mixture.

ChocoNanner Muffins

This recipe was inspired by two blogs that I also follow like it’s my job. No really? When will this become my job. Middle school children need no help with math…
First I took Shanna’s banana scone recipe. Then because I didn’t have a cool pinwheel scone maker, decided I would make muffins. I also cut the recipe in half because I was just making them for Aram and I.

Chocolate Chip at the top!

The name came from Faith, Food and Fitness and her love for using the words nanner and tater. Now I do it too!

Without further ado:
Choconanner Muffins:

½ cup wheat flour
1/3 tablespoon baking powder
¼ tablespoon canola oil
½ cup mashed nanners
¼ egg substitute
1 tablespoon chocolate chips

What do do:
1. Mix dry (except chocolate chips) ingredients.
2. Mix wet and mushy.
3. Add together and then fold in chocolate chips.
4. Bake at 400 degrees for 12 minutes.
