Stuffed French Toast
This is just a fun recipe. It isn’t terribly difficult (or difficult at all) but I eat about once a week so it deserves it’s own special internet space.
1 egg (1/4 egg beater)
¼ cup milk
1 tsp pumpkin pie spice
½ cup yogurt (I like Chobani greek yogurt)
1 scoop protein powder
¼ cup canned pumpkin
4 slices bread
I also have substituted 2 tablespoons peanut butter, 2 tablespoons jelly…the list is endless.
Mix the egg, milk, pumpkin pie spice and any other seasonings you desire.
Mix the pumpkin yogurt and protein powder. This concoction should be pretty thick. Spread evenly onto all four slices of bread. There may be a little extra which I promptly use for dipping.
Make two sandwiches and dip the bread into mixture and cook on low heat. Walaa
