Swimming, Blizzards and Grimey Fastfood

I think that pretty much sums up my weekend.

Saturday:

This morning we went to a Greek restaurant with the team.  Not just any Greek Restaurant but a pretty fancy one at that.  Some of these people act like they haven’t graduated middle school.  I can’t even complain that it’s Aram since he wasn’t there ha.   One thing I love about Aram is he knows the right time to act his age and such.  These boys certainly do not.

I didn’t take a picture but I had pancakes this glorious morning.  They were okay, but they were plain and buttermilk are certainly not my favorite.  You see buttermilk pancakes if you type it into google that would probably be more photogenic than these guys. The food also took about 1 ½ hours to actually reach us and my blood sugar was low.  Real low.

My meet went pretty well. I QUALIFIED FOR MY CHAMPIONSHIP MEET.  Not with a great time by any means but any improvement is better than non right?  I had a better 500 than 1000 which barely ever happens to me. (I actually hate the 500…but no one wants to swim the 1000 and mile in one meet ha.) I just was not feeling jazzy during the 1000 which is exactly what I told my coach.

I think at our next meet (in a month and a half), I’ll be below my old times.  I certainly hope so and I felt so good at practice the previous week.  I’m not too bummed though because at least I requalifed.  Now to just drop times.

Saturday I invented the most delicious way to eat protein:

¼ cup pumpkin

1 scoop protein powder (cupcake batter flavor)

Mix together to make protein pumpkin butter and with peanut butter on a bagel is the best preswim/postswim snack.  I had about 3 of these at the meet ha.  I just am not a fan of protein shakes anymore.  I think I had too many my freshman year.

For dinner, we stopped at the mall and I was just craving grimy chicken teriyaki from the “Japanese fast-food restaurant” in the mall.  It wasn’t terribly good, but it was exactly what I was craving ha.

No salads today-just cooked veggies with my grime dinner ha.  Which actually-I find chinese restaurants and even fast food, have excellent steamed veggies.

The bus ride back was about 6 hours long.  Needless to say-I didn’t feel like going to the after party at the swim house.  Our team is still undefeated so they wanted to celebrate with a party.  I didn’t feel like doing forties when we got back at midnight and no one left my house (because they were getting ready) until 1.  I wouldn’t even have felt like going and doing forties on a normal day.  I think I would rather cook with my beer versus drink it.  Actually I know so.

Sunday:

This morning I was feeling some French toast.  I had pancakes yesterday, so I wouldn’t miss them too much.  I ate in bed and watched the Backup Plan.  Has anyone else seen it?  So cute.

I was also dragged to the gym today.  Good thing too-I hadn’t run since Thanksgiving.  I really think if it was warmer I would run a lot more.  How sad is that, my excuse for not running is the cold.  I guess at least I’m honest with myself.  I ran six miles and watched MTV.

My post workout snack was another peanut flour muffin topped with chocolate sauce made from 1/8 cup cocoa powder and 1 tablespoon sugar free maple syrup.  Peanut butter and Chocolate really do go hand and hand.

At the dining hall today I had gnocchi (my favorite), prime rib and a salad.  Sunday’s, I have to admit are my favorite day to eat on campus because they have both gnocchi and prime rib.  Winner in my life.  I must admit, I had a bit more than I would have liked and I got really anxious while eating today.  I had the craving of nothing can satisfy me, but I relaxed a little bit.  So I didn’t binge eat-but it wasn’t as successful as I would have liked.  Still good though.

Anywho-I’m going to go bury myself in the library dungeon and get some math homework done so I don’t have too much to do this week.

A week in Review-Here are the goals I made for the week and how I did with them.

1.      I will weigh myself every day.

I did it.  It was hard to come to the realization that I ate like it’s my job but I feel a lot better and have been eating a lot better since.  Weighing myself everyday really helps me to focus on the goals at hand.

2.      I will try something new at least 3 times a week. Experiment-live a little, new recipe new something.

I tried a new type of sandwich, a new restaurant, and new things almost every time I went to the dining areas on campus.  I would say this is my greatest success of the week.

3.      I will have a different breakfast once a week that does not include French toast, waffles or PANCAKES.

I made eggs and grilled tomatoes and loved them.  I survived on Tuesday and am still alive.  No one died because I did not have pancakes.  I am proud.  I also had French toast today-which is continuing my roll of not having pancakes every day.  So only pancakes five times this week ha.

4.      I will also stop complaining like it’s my job.

I am have been a positive Polly all week.  So I didn’t have the best races at my meet-I looked at the positives and that I qualified so I’m slowly getting better.

As one of my teammates said to me yesterday, “Not everyone can be a champion every time.”

Stuffed French Toast

Stuffed French Toast
This is just a fun recipe. It isn’t terribly difficult (or difficult at all) but I eat about once a week so it deserves it’s own special internet space.

1 egg (1/4 egg beater)
¼ cup milk
1 tsp pumpkin pie spice
½ cup yogurt (I like Chobani greek yogurt)
1 scoop protein powder
¼ cup canned pumpkin
4 slices bread

I also have substituted 2 tablespoons peanut butter, 2 tablespoons jelly…the list is endless.
Mix the egg, milk, pumpkin pie spice and any other seasonings you desire.
Mix the pumpkin yogurt and protein powder. This concoction should be pretty thick. Spread evenly onto all four slices of bread. There may be a little extra which I promptly use for dipping.
Make two sandwiches and dip the bread into mixture and cook on low heat. Walaa
