Dana is having a giveaway for “Brave Girl Eating,” a story about a familys struggle with anorexia.  An obvious topic in the blogging world.  In high school, I was very particular with what I ate (which wasn’t enough).  Although I was never fully diagnosed (because I was never severely underweight) there were clear signs that something wasn’t quite right.  Anyways-if you aren’t checking out the contest at least check out her blog.

I will now blow your mind with a new type of pancake that I have just bonded with.

The Coconut Pancake.

Ever since we went to Puerto Rico with swim team-I have been obsessed with coconut anything.  Today during swim practice while I had nothing to think about and was wide awake for once,I was inspired to make it.

½ cup flour

1 medium egg

1 tsp baking powder

2 tablespoons coconut flakes

1 tablespoon coconut extract

¼ cup milk

½ cup Greek Yogurt (I used vanilla Chobani)

Optional:

1 scoop protein powder

If I had a favorite use of coconut this would be it.  Since I won’t be able to make pancakes until Sunday-I’ll be thinking about these baby girls all the way until then.

On a side note, does anyone know where I can buy unsweetened coconut flakes?

Today was just busy getting ready for my travels tomorrow.  We are leaving for my last cross country race at 10am tomorrow.  The race isn’t until Saturday at 12pm.  I’m rather nervous since most colleges in New York state will be there.  There are over 350 females running and I’m extremely claustrophobic.  Anyways, I have done everything I can to prepare for this race.  I’ll have internet on the five hour bus ride-so I’ll be spending doing homework (aka reading blogs).
