Diner Day, New Hair and Pumpkin Muffins

I never had my computer crash before-but it crashed and I lost my blog that I had so excitedly typed up. Well now-that is no fun and I guess I will have to recreate it and post it later. You see, I was going to post the blog at 3pm between class and swim practice because in all honesty, it’s a Friday night (and the Friday before Halloween) who is going to spend their time reading my blog?

Well hopefully you! But if not-I understand. You see with swimming we have a 48 hour policy of no drinking so there are no parties going on anyways. Not that I drink but I do have a social life (I swear!). So I’ll be spending my night reading blogs and doing homework. Anywho.
In response to everyone’s comments-I agree 100%! No one person can fulfill all your social needs. You have girlfriends to go get manicures with, you have a significant other that truly understands all your inner feelings, you have brothers and sisters you have grown up and of course you have other Foodies who love to blog! Ha-had to throw that in there.

Today it actually came up with Aram and I, he was talking in some sort of “Bro talk” vernacular that I had no idea what was going on. So I point blank said, “Aram I have no idea what sort of bro talk you are using and told him to read my blog.”

Dark Hair

or Lighter Hair?

——————-
Today started off at 6:40am-when my alarm went off. I sat there debating whether I should go for my run now or somehow squeeze in a run in between classes, then I thought back to last Friday. Last Friday was a disaster. I didn’t feel good because I was running on empty and was in bed by 7. I couldn’t complete a swim practice but I did complete a run. Anyways needless to say I slept in until 8 today and then my meeting that had thrown me off schedule was canceled anyways. So I got in my run at 12 like normal.

Friday is Diner Day!

I ordered 1 raspberry stuffed pancake and 1 apple pancake. Yes, the raspberry pancake came with whip cream on top.

So thick and neverending

Aram on the other hand ordered a meat lovers omelet.

Then off to Sports Psychology. We were almost late hehe. If you missed my blog on Wednesday, we are watching Bring it on. My teacher had a conference and so she had a graduate student put in the movie. Not only was there an attendance sheet but there is a GRADED worksheet. I love the movie to death (it’s one of my favorites) but in a college setting, she could have cancelled class and I could have gotten my math homework done. Oh wait…I did that while watching the movie anyways. Waste of my life.

Today I made pumpkin muffins for the cross country team. I posted a while back, that a big cross country meet happened to be on the same day as a big swim meet. Of course…well needless to say my swim coach told me if I don’t swim we won’t win and my cross country coach supported that. Was I in support? No not really-but I’m not a drama starter.

So I made them pumpkin muffins for tomorrow and I’m going to go give them to them on the bus (which leaves at 5:30am). No one can say I’m not dedicated to my teams!
Pumpkin Muffins:
1 box any cake mix you choose (I chose Spice Cake)
1 15 ounce can of pumpkin puree
1 tablespoon vanilla extract
2 egg whites
Mix and put into muffin cups. Cook according to package-I found mine were ready in about 12 minutes but I made them smaller.

All packaged up

Not that I didn't eat half the batter...

Question for you: Favorite Holiday?
I like Christmas because of all the festivities. I like Halloween because I like the overall theme of pumpkins (but not being scared). New Years is good because it is a new start. Thanksgiving, Easter and Fourth of July bring families together. Valentines day is exciting if you have someone to share it with. What am I forgetting hehe?

  1. Hey Hollie :) I like your hair dark! I find Aram so funny! He got a meat lovers omlet… gotta love guys, huh?! Good luck in your swim meet!! I really hope you do well girl :) Those pumpkin muffins look good too… I made a batch today too! I never thought of using a cake mix-that would save sooo much time!! I usually eat half of the batter though ;p

    Have a nice Friday evening!

  2. OMG those pancakes look DELISH. I know what I’m having for breakfast tomorrow and I may throw in some protein on your advice. ;)

Like the hair color a lot. Perfect for this time of year. And best holiday for me is Thanksgiving followed by Christmas. Both are about friends, family and being in good company. Have a great weekend!

  3. I love Christmas, but I am a bad Canadian because I hate the cold and snow. But I love the spirit of Christmas.
Dang girl, those pancakes look aweeesome! :)

You are so busy; it is good that you are a scheduler!
    Happy Halloween!

  4. Hollie- On Oct 24th you have a pumpkin mousse recipe that lists pumpkin pure. What is pumpkin pure?
I’d love to try that recipe.
    Thx-Sharon
p.s. I’m not a fan of black hair, so I like brown, especially chocolate brown!!!

  5. Love diner day! It gives me food envy :) And I’m digging the dark hair, it really makes your features pop. Light hair has a tendency to wash things out, in my humble opinion.

  6. Those raspberry filled pancakes with whipped cream will be in my dreams tonight :) My favorite holiday is probably Christmas. I just love the whole Christmas season. I think I’m going to start listening to Christmas carols next week :)

  7. I do muffins like that except I do a box of cake mix (usually spice), 100% pure pumpkin mixed together and that’s it! 400 degrees for 20 minutes. Hope you have a good weekend!

  8. i like the dark hair! it is very fallsy. i must say my favorite holiday is thanksgiving followed by valentines day as a close second. halloween isn’t too shabby either. really, i think i like all holidays. give me an excuse to cook and have friends and family over and i am all about it!

  9. Love love love your hair!!! Looks so good! My favorite holiday is definitely Thanksgiving because I get to see my WHOLE family!
Right now, I can’t drink on accutane but I’m still going out. But it is refreshing to see a college student whose weekends don’t revolve around alcohol and partying. I love it!
    Have a wonderful weekend :)
