Conquering the Beast, Sushi and Pumpkin Mousse

The most simple pumpkin recipe of them all!  Actually-all my recipes are relatively simple so here we go.  I borrowed this recipe from Jamie and I’m not looking back because it’s delicious.

Pumpkin Mousse

1 package of pudding (I just had pistachio and banana cream on hand-so I went with banana)
1 cup pumpkin pure
1 scoop protein powder (I’ll add it to all my pudding creations)
1 and ¼ cup milk
3 tsp pumpkin pie spice
It made two about 1 cup servings.  (4-1/2 cup servings but I’m a hungry girl).

Mix all ingredients together and whisk whisk whisk.  Let sit in the fridge for about 15 minutes to set and wala.  It makes a great dessert or Preworkout/post workout snack yumm.

210 calories/32 carbs/0 fat/23 protein/30% calcium/5 fiber

Today began when I woke up at 9am.  This weekend, I have spent just recovering my body.  I have been so tired so this is a nice change for me.  Anywho let me begin my rant. Let me tell you, Aram and I decided to go to the dining hall this morning and I realized why I have only been there one time for brunch.  It was awful.  They made crepes (as pictured) but it wasn’t good.  I ended up having lucky charms and an apple and some powdered eggs (but I like those). I didn’t eat but one bite of the crepe…depressing.
I wish I had just had chocolate oatmeal from yesterday.

After my not-so-wonderful dining hall experience I came back and painted my nails and worked on Halloween costume.  Sounds like the key to being a successful college student eh?

Then I copied some more modern notes into my big math notebook.  I find copying the notes into a new notebook helps me really learn the material better and guess what?  I have a big test in that class tomorrow yuck.

 

 

Then it was time.

Time to conquer the beast.

In the pouring rain, I walked to the gym (which I had not been in about a month) and got onto the treadmill.  I’m not a fan of treadmill running at all.  My mind wanders, I get bored easily and have a terrible time finishing my runs.  How is it I can stare a black line swimming for two hours but can’t run while watching tv?

I’m not going to lie-the first 30 minutes was hell.  There was nothing on TV, there was no one to creep on in the gym or to amuse me, God I didn’t even know anyone in there at the time to distract me.  Then at about mile 4, I just relaxed and finished my nine miles.  It will need some getting used too but it is better than running in the rain and cold.  I also can get some core work done while I’m there-so that will be a plus.

Upon arriving back at my townhouse, I cooked up some more chocolate oatmeal.  This time I added peanut flour and pumpkin.  I think I like the protein in better (just because the vanilla makes it a tad more sweet).

Then insert some fooling around pretending to do some homework.

Aram really wanted to go to Mongolian buffet tonight.  I have been wanting to make Pumpkin Gnocchi the last two nights but we will tomorrow we will.  I’m not taking no for an answer! I love the Mongolian Buffet (it’s Chinese buffet but has sushi!  Good sushi too-not normally yucky buffet sushi) but the waitresses and waiters are so pushy.  They don’t even try to hide they just want you to come, eat and leave.

Today all I had were my two favorite items there.  The sushi and the Long Yan Fruit.  Holy Moly,-incase you missed my blog about my obsession of Long Yan back in August, they are my favorite fruit.  I can only ever find them at Chinese Buffets though-so if you know where I can find some please tell me. I also had a lot of kiwis.  Another great fruit that I haven’t had for a while.  I somehow avoided the fried food and even the ice-cream tonight.  Could be because its 40 degrees and raining…

I had three plates full of this good stuff.

After that Aram and I went to Walgreens next door and I got a pumpkin headband to complete my Halloween costume.
