Today I was exhausted from my race yesterday. I’m going to post a better blog about it once the school posts results and a write-up of the meet. I’ll give you a preview and say it was an amazing experience minus the pouring rain and cold. Our ladies team got 2nd place overall (out of 9 teams) and I got 5th place overall (out of 90 runners). Anyways-
Today I woke up at 8:30am. I actually slept for about 10 hours last night. My body really needed it though and I woke up to a nice cup of coffee. My boyfriend and I went to the dining hall today for breakfast when it opened at 9:30. I have somewhat of a social phobia and don’t enjoy eating at crowded times. Normally over the weekends the most crowded times are between 11-2 because that is when all the people who got completely drunk wake up and go eat. I don’t enjoy eating food at a dining hall that I could make in my townhouse but he really wanted to go and I knew that I could find some fresh fruit to eat that I would have to go to the store and purchase if I was so inclined.
9:30am-Waffle with yogurt topping and cherries, 5 cups of grapes (estimation) and 1 cup of egg substitute (estimation). I think the dining hall uses powdered eggs for their scrambled eggs but I’m not entirely sure. I just do not think it’s possible for them to continue to scramble dozens of eggs for the amount of people that come through.
I spent a good amount of today doing homework, which obviously wasn’t the most enjoyable experience. I needed to take a break and went to the gym and on the elliptical for 30 minutes then swam for about an hour. A little more actually. Our boilers were off all summer at the pool so it has been rather chilly. When I am already warm (and sweaty from the elliptical) before the pool, I don’t get too cold while swimming.
2:00pm Green Monster. Today’s recipe was
1 cup spinach
2/3 cup Oikos Greek yogurt
1 cup strawberries
½ scoop Isopure protein
Also very delicious, however, this isn’t as green as the other green monster I made ha.
6:00 dinner time! One of my Sparkfriends Allison shared an amazing recipe with me for twice baked sweet potatoes
http://www.peanutbutterboy.com/twice-baked-peanut-butter-sweet-potatoes/
It was the most delicious recipe I have tried in a very long time. I think I’m going to make it a lot. Thanks Allison! We grilled 2, 8 ounce steaks with the sweet potatoes and had a quite tasty dinner. I like my steaks medium-rare and mooing at me. How do you care for your steak? My boyfriend actually likes his nearly done.
Today was not the most interesting or exciting day I have had thus far, but I have managed to stay sinless. Although my housemates are making banana bread downstairs so it is becoming more and more difficult.
